23.01.2022 BAKING WITH HONEY Winter, my most favourite time to cook (and eat). With plenty of beautiful RAW CANDIED HONEY on stock there’s nothing like a Citrus Honey Tart. One of the many recipes I love to make containing honey. As honey is made up of natural fructose (fruit sugar) and moisture, it is perfect for baking. The different flavours of each honey determining the taste and sweetness each time.... I hope you enjoy making and eating this tart. I still have plenty of RAW WINTER CANDIED HONEY in stock, please phone to order. CITRUS HONEY TART 4 eggs, separated cup plain flour, sifted 1 cup honey 1 tsp. baking powder cup almond meal 2 tbls caster sugar 1cup desiccated coconut icing sugar for dusting cup lemon juice 300ml thickened cream 270ml can coconut milk 1 tbls honey 26cm sweet tart case Preheat oven 180c. In a large bowl, place the egg yolks, honey, almond meal, coconut, lemon juice, and coconut milk and mix thoroughly until combine. Whisk in the sifted flour and baking powder until just combined. In a separate bowl, beat the egg whites until stiff. Add the sugar and beat until sugar has dissolved. Add the whites to the egg mixture and fold in until just combined. Spoon into sweet tart case. Bake 30 35 minutes, or until firm to the touch and golden brown. Leave to stand for 5 minutes before dusting with icing sugar. Serve with honey whipped cream. Honey Whipped Cream Combine cream and honey in a bowl and whip until firm. Enjoy! I

19.01.2022 To all the Traumatized Apiarists all over our fire ravished country Cottage Garden Hives extends its sympathy. The loss of your bees, hives and ultimately your income, is beyond our comprehension, it is truly devastating. For these Beekeepers it may take more than their life time for the flora to recover well enough to produce nectar and pollen for the bees to forage through, it may be as long as 20 years. It is estimated that it will be 3years before some apiarists can retu...rn their hives to these sites again. Any trees left flowering now will not have enough nectar for the bees as they have been severely affected by drought. Bees are worth so much to our economy through pollination and on top of that our honey production will plummet. South Australia is still recovering from an 18-month honey shortage due to the drought we experienced in 2017 and 2018 and due to this we will provide very little comfort to the low supply. Now is the perfect time to raise your favourite flower and herb seeds Gardens need pollinators and bees are amongst the best. To attract more pollinators to your garden we need to make it inviting by:-... Not using pesticides. ... Choosing several colours of flowers (bees love violets and blues). Planting flowers in clumps. ... Providing shallow rock pools of water Including flowers of different shapes. ... Planting where bees will visit (sunny spots) Remember without them, there would be limited flowers and even fewer fruits and vegetables. Your flowers will provide the bees with, Nectar which is loaded with sugar, a bee’s main source of energy and Pollen which adds proteins and fats to their diet. Enjoy that soothing buzzing sound of bees in your garden.

14.01.2022 Let your Grasses go to Seed Grasses are pollinated by wind alone and don’t need their little visitors, it’s the bees that benefit from them. Grass, weed and herb flowers produce large quantities of pollen, the perfect food source for our bees. Most grasses contain nectar, great for making the honey we share. Grass flowers are usually an insipid natural colour, bees are attracted to the flowers by the oil they contain and their perfume they release. Low lying grasses provide... a protected environment on a windy day for many of our pollinators. Grasses and Herbs in flower are a great bee enticer and a wonderful addition to your garden. The perfect hum of bees coming from the native grasses on a lagoon of the Murray River.

12.01.2022 It's been a long dry 12mths, with very little food for our bees. Finally with the early winter rains we see some flowers appearing and plenty of nectar and pollen. Our front paddock has the happy hummy sound of our beautiful bees. We have even had some visitors that now have made us home.... I'm pleased to say we have some honey for sale 500g $7. 1kg $13

05.01.2022 Cottage Garden Hives 1kg Honey is now available at The Butchers Secret Angle Vale The Best Method to Liquefy your Honey We are now in the depths of winter and all our honey from 2019 is well and truly crystallized (see my previous article on why honey crystallizes).... We can re-liquidly crystallized honey. Place the honey bucket in warm water and stir until the crystals dissolve, or, place the honey in a microwave-safe container with the lid off and microwave, stirring every 30 seconds, until the crystals dissolve. Be careful not to boil the honey. Honey heated over 60deg.C will destroy the taste, texture, and harm the health benefits of your honey. Also Google: Why Raw Honey and Not Just Honey?
