21.01.2022 Happy Hump Day to my favourite people! As we are well into summer and these heat waves feel like heat tsunami's, its important to drink plenty of water and eat good, nourishing foods to keep the energy levels up! A great snack or light meal are these chicken and vegetable rice paper rolls, which are super simple and can be made up in a big batch and eaten within 3 days - if they last that long so this recipe makes 3 rolls WHAT YOU NEED: 3 Rice Paper wrappers... 150g Chicken Breast - can be marinaded in soy and honey for extra flavour 90g Kaleslaw mix 3 large mint leaves 1/3 cucumber, cut into small batons 20ml Sweet Chilli Sauce 1. Cook chicken breast until browned and slice thinly, allow to cool before using. 2. Dampen 1 rice paper wrapper as per packet instructions. 3. Place 2 mint leaves, 1/3 of the veggies and chicken on top and roll (most packets have a diagram showing the best way to roll). 4. Make the remaining two rolls and serve with sweet chilli sauce. Means so much In terms of what this page is all about... starting soon will be a variety of outdoor 'bootcamp' style classes which I will be running on a regular basis. Not only are these classes a great way to get your fitness levels up but also meet new people and have fun! I'm sure that most of you enjoyed some great food and drinks over the 3 days which may not have been in your current meal plan It's good to give yourself a break every now and then though, so use those extra few calories as fuel and motivation for this weeks' workouts and keep smashing those goals! 14.01.2022 T.G.I.F Happy Friday everyone! Hope you all are as keen as I am for the weekend! As I mentioned yesterday I will be posting lots of workouts, tips and RECIPES!!! My approach to food is all about balance and finding ways to enjoy the good stuff without the guilt that 90% of people feel when they eat something that is "not healthy". My first recipe for you all is my favourite by far and its my Choc Chip Birthday Cake Protein Pancakes now a lot of you are probably thinking h...ow are these healthy but let me tell you not only are they healthy but taste soooo good ! What you need: 1 Ripe Banana 2 Large/XL Egg Whites (I only had medium eggs so I used 3) 40g Protein Powder (1 heaped scoop) - I use Rule1 Birthday Cake Flavour which after trial and error with different brands, this is by far the best. 25g Dark Choc Chips Mash banana until smooth, add egg whites and combine. Mix in your Protein Powder and Choc Chips and fry in a pan with a little oil of your choice if need - I use coconut oil! THAT'S IT!! Give it a try over the weekend and let me know what you think!!
