16.01.2022 On sale for $12.95 per 750g packet Smoked Paprika Barbecued Spanish Mackerel Cutlets 4 x Spanish mackerel cutlets 1 tsp smoked paprika... 1 tsp sweet paprika tsp ground cumin 1 cup flat-leaf (Italian) parsley leaves 1 tbsp freshly squeezed lemon juice 2 tbsp extra virgin olive oil 150 g cherry tomatoes, halved or quartered if bigger olive oil, for cooking Mix paprikas together with cumin and tsp salt and sprinkle (from a distance for effect) evenly over the fleshy parts of the fish. Heat the barbecue hotplate to high. Drizzle the cutlets with a little olive oil and grill on each side for about 4 minutes or until nicely browned and the flesh has changed colour. Easy way to check if the cutlets are cooked; grab the backbone and give it a wiggle. If the fish is cooked through, the bone will be very loose. If the fish is still a bit firm and stuck to the bone, then continue cooking. Combine parsley, lemon juice and extra virgin olive oil with some salt and pepper in a bowl until the leaves are well coated. Add the tomatoes and give it a good mix. Dish up the fish with the salad and potatoes or even some couscous or quinoa. 03.01.2022 BBQ BARRAMUNDI RECIPE Right now our Barramundi Fillets are currently on special for $16.95 per KG and we think you will love this BBQ Barramundi Recipe with Mixed Grains! Ingredients: 6 Coventry Seafoods barramundi fillets, skin off... 1 cup cooked long-grain brown rice 1 cup cooked quinoa 420g can Lentils 1/3 cup currants 1/3 cup chopped flat-leaf parsley 1/3 cup chopped coriander 2 spring onions, sliced 1 pomegranate, seeds removed (optional) cup olive oil, plus 1 tbs extra 2 tbs lemon juice 1/3 cup slivered almonds, toasted 1/3 cup pine nuts, toasted Method: 1. Combine rice, quinoa and lentils in a large bowl. Add currants, herbs, spring onion and pomegranate seeds. Whisk oil and lemon juice together. Add to rice mix and toss to combine. Set aside. 2. Preheat barbecue plate on medium high. Brush barramundi fillets with extra oil and season with salt and pepper. Cook for 3 minutes each side or until just cooked through. 3. Add nuts to salad and transfer to a platter. Top with fish and serve with slices of lemon.
