16.01.2022 Our Head Chef Scott Alsop has been at it again, this time with a delicious Beef Wellington, happy cooking! 600g beef fillet English mustard ... 500g mixed mushrooms 2 cloves of garlic thyme truffle oil (optional) 120g flour, 500ml milk, 3 eggs (for 3 crepes) 1-2 sheets of puff pastry 1 egg salt pepper To make the crepes, whisk eggs and milk together, sift flour and mix together, finish with a touch of salt. Strain and allow to rest for 15 minutes and skim off. Heat a lightly oiled medium frying pan, over a medium heat, ladle a small amount of the batter into the pan and rotate to spread batter as thin as possible. Lightly colour each side, will need 3 or 4 crepes. Next seal the beef, season the beef well and in a hot pan, add olive oil and colour the beef all over to get a nice crust, add a knob of butter and a sprig of thyme, garlic and baste. Remove from the pan and brush with English mustard. Allow to cool completely. Finely chop the mushrooms and garlic by hand or in a food processor. Cook in a dry hot pan until the moisture from the mushrooms has cooked out, season to taste, add chopped thyme and truffle oil if using. Lay out a smooth double layer of cling film on a bench , using enough crepes to wrap the beef, lay on cling film and spread the mushroom mix over evenly. Lay the beef on the mushrooms and fold the crepes around. Use the cling film to tighten and shape the wellington. Place in fridge for 20 minutes. Encase the beef tightly with puff pastry, egg wash and refrigerate or using the 2nd sheet with a lattice cutter, place over the 1st sheet of pastry and egg wash again. Pre heat oven to 190c, cook for approximately 30 minutes, allow to rest for 20 minutes, slice and enjoy! images and recipe by Head Chef Scott Alsop

However the new level of restrictions will still not allow us to re-open with the level of staffing and service expected by our valued guests.
