14.01.2022 BAKED PUMPKIN RISOTTO Roasted Garlic Smash olive oil 2 brown onions, finely diced 500g pumpkin, peeled & chopped... 1 large zucchini, diced into 1cm chunks 6 cloves garlic, crushed 2 cups arborio rice 4 cups water 3 vegetable stock cubes 50g pinenuts Small handful Grated Parmesan cheese 150g baby spinach leaves 40g butter 1 dessertspoon Divin-O Balsamic vinegar Pinch Chilli & Lemon salt Preheat oven to 220C (200C fan-forced). Place pumpkin on an oven tray lined with baking paper, drizzle with oil, and season with salt & pepper. Toss to coat, then roast for about 25 minutes or until tender. While pumpkin is roasting, heat a pan over medium to high heat, and drizzle with oil. Add onions and zucchini and cook until softened. Add garlic and cook for a minute or until fragrant. Add water, stock cubes and arborio rice. Bring to the boil then remove from heat. Transfer risotto to an ovenproof dish. Cover tightly with foil and bake for about 30 minutes. Add extra water if needed along the way. Toast pinenuts in small pan and set aside. When risotto is 5 minutes away from being ready, add butter, baby spinach, pinenuts, parmesan cheese, Chilli and Lemon salt and Divin-O balsamic. Stir well until spinach has wilted and cheese has melted. Divide into bowls, and serve with extra parmesan garnished on top. Yummy Thankyou Amanda for Sharing

Italiano Field mushroom Pasta Butter Milk Cornflour Tin of tomato soup Pasta sauce Mince Onion Fresh tomatoes Mushrooms Water Parmesan cheese I slow cooked my sauce 1 kilo mince 1 sliced onion 10 button mushrooms Tomato soup Pasta sauce 1 fresh tomato Teaspoon of thyme for garlic chive and onion ponderosa field mushroom salt and Italiano Add a tin of water Let cook away Boil water add pasta I used Shells My cheesy whip sauce Table spoon of butter melt down in a jug microwave 30 seconds Then add 2 tablespoon of cornflour mix with butter then add 300 mils milk place back in Microwave for 2 mins then stir then add cheese place back in Microwave for 60 seconds Then bring out and sprinkle Stockman's whip salt in sauce and mix When pasta is ready place in a tray and add sauce then sauce on top Place in oven for 15 mins on 180 degrees and then pull out and put cheese on top put back in oven until melted and brown Thankyou Sarah for Sharing https://Flavourista.com.au/DebbieTurner Serve and enjoy This will feed 6 people and under $15
