18.01.2022 A great first Farmers Market for us yesterday and wed like to thank everyone who came along to XCARGO and bought some of our artisan - traditional breads, world breads and pastries! We had a ball and met some fantastic people. We wouldnt have bread in time if it werent for David and his team from All About Bakery Equipment. Right at the start of production we broke a main head spring in our Bun Divider Rounder.... Called David, its a Saturday night on a long weekend, he answers and 2hrs later we have technician with parts and machine is operational again. So grateful to have access to such amazing service and customer care here in Brisbane. Thank you so much guys!

16.01.2022 We are very excited to announce that our Apprentice Lydia will now be representing Queensland in the L.A. Judge Award final in 2019 after winning the Queensland Trials. Lydia we are very proud - a huge congratulations!

13.01.2022 We use French Butter in our Croissants. Weve tried many different butters but with our Queensland heat and humidity we need a butter that can not only stand up to our environment, but deliver that authentic taste and crisp, flaky finish that we expect.

12.01.2022 Congratulations to our Baker Lydia Horne who did a tremendous job this week at the L.A. Judge Award - Australias prestigious baking apprentice competition. She did us proud and came Runner-up in a very close competition (1.5 points separated the top 3 competitors). She has won a trip to the Puratos Group Hong Kong Kitchen for a two-day amazing experience learning new skills.... Shes pictured here with Puratos Australia-New Zealands Marco Stampfli and her family who were in Sydney to cheer her on and celebrate with her. Again congratulations Lydia!

10.01.2022 Happy Bastille Day! We celebrated by baking lots of Baguettes for our customers, along with croissants and pastries. Very happy with how our sourdough Baguettes turned out!

Training in all aspects of baking including verbal presentation, and studying Baking and Milling theory have consumed us for the last 6 months.
