24.01.2022 Wednesday Wellness Day Berry and oat crumble bars. These make a great healthy nourishing snack for kids too. Ensure to soak your oats in filtered water for at least a few hours prior to consuming or cooking, to ensure maximum nutrient absorption and to aid digestion.... Ingredients 2 cups rolled oats 4 tbsp mixed seeds (chia seeds, pumpkin seeds, flaxseeds, sunflower seeds) 1/3 cup runny peanut butter 1/2 tsp cinnamon powder 1/3 cup soy protein milk 1/4 cup maple syrup 1 cup fresh or frozen berries 1/2 cup dairy-free chocolate chips (optional) Instructions Pre-heat your oven to 180 degrees Celsius. Line a small square tin or loaf with baking paper. Mix in a bowl the oats, cinnamon, seeds, peanut butter, soy milk and maple syrup until sticky and well combined. Press down 3/4 of the mix in your tin. Keep 1/4 on the side to add on top as a crumble. Add the frozen berries on top, the chocolate chips and the extra crumble mixture and extra seeds and place in the oven to bake for 25 minutes. Leave to cool down before serving. 23.01.2022 Wednesday Wellness Day Ocean Trout & Pineapple Salad Yum Something very different for your next salad INGREDIENTS 1 tsp each ground cumin, coriander, sweet smoked paprika (pimenton) and fennel seeds... 2 tbs olive oil 4 x 150g ocean trout fillets, skin removed, pin-boned 1/2 pineapple, peeled, cored, thinly sliced 2 Lebanese cucumbers, cut into thin wedges 1 long red chilli, seeds removed, thinly sliced Juice of 1 lime 1/2 cup coriander leaves METHOD 1. Combine the spices, 1 tbs oil and 1 tsp salt in a large bowl. Add the fish, turning to coat, then set aside for 15 minutes to marinate. 2. Heat the remaining 1 tbs oil in a frypan over medium heat and cook the fish for 2-3 minutes each side until almost cooked through. Remove from the pan, loosely cover with foil, then set aside to rest for 5 minutes. 3. Meanwhile, place the pineapple, cucumber, chilli and lime juice in a bowl, season, then toss to combine. Place on a serving platter and flake the trout over the top. Sprinkle with coriander to serve. 10.01.2022 Wednesday Wellness Day Today a healthier version of a yummy treat for you, as well as being really easy to make, these cups are healthier than your average treat as theyre made with oats, peanut butter and dark chocolate with a little bit of maple syrup to sweeten CARAMEL CHOCOLATE OAT CUPS Makes 6 cups Ingredients... For the oat base 70g (3/4 cup) rolled oats use gluten-free oats if youre allergic/intolerant to gluten 2 tbsp smooth peanut butter 2 tbsp maple syrup Pinch of salt For the caramel layer 100g (6 tbsp) smooth peanut butter 1 tbsp maple syrup For the topping 70g dark chocolate, melted Method Mix all the base ingredients in a bowl, then press into a 6 cup silicon muffin tray. Freeze for 15 minutes. In the meantime mix the peanut butter and maple syrup in a small bowl to create the caramel, then spread over the oat bases and top with the melted chocolate.
