22.01.2022 Mexican Chicken Avocado Salad Ingredients: Lime Dressing / Marinade: 2 tbsp lime juice... 1 tbsp honey 1/4 cup olive oil (65ml) 1 garlic clove, minced tsp salt + black pepper Chicken: 2 small chicken breasts, 400g/14oz (pound or split if thicker than 2cm / 4/5) 1/2 tsp EACH chipotle powder (Note 1) and oregano 1/4 tsp cumin powder Salt & pepper 1/2 tbsp olive oil Avocado Salsa: 1 avocado, chunky dice (watch video to see how I do this) 1 cup cherry tomatoes, halved cup corn kernels (canned, drained) red onion, finely chopped Salad: 1/4 cup coriander / cilantro, finely chopped 5 heaped cups cos lettuce, cut into bite size pieces Instructions: Place Lime Dressing ingredients in a jar, shake well. Put 2 tablespoons of Dressing in a ziplock bag. Add chipotle, oregano, cumin, salt and pepper, mix/squidge bag. Add chicken, seal and massage to coat. Marinate 30 min overnight. Heat 1 tbsp olive oil in skillet over medium low, cook chicken to taste (2cm / 4/5 takes around 8 minutes), getting a nice brown crust on it. Rest 5 min then slice. Add 2 tablespoons of coriander into Dressing, shake. Place avocado, corn, tomato and onion in a bowl. Add remaining coriander, drizzle with a bit of Dressing, toss gently. Place lettuce in a bowl, drizzle with a bit of Dressing, toss. Assemble Salad: Place lettuce on a serving platter. Top with Salsa and sliced chicken. Drizzle with remaining Dressing. Serve. 15.01.2022 We have expanded each division from 12 to 18 pairs. The locations, workouts and times have all been confirmed with the events occurring across the entire precin...ct. Slight change to the standards with the addition of Kettlebell Swings. There are a few spare spots left in each division for any late registrations. Everyone who confirmed or submitted their registration last week have been put into the heat schedule and are locked in. Workouts, heat breakdown, prizes, entertainment, vendors, maps for parking and payment link will be put up closer to the Comp.

13.01.2022 Grilled Fajita Chicken & Avocado Salad Ingredients: 2 medium boneless skinless chicken breast, cut into half horizontally 2 cups sliced bell peppers, colors ...of choice 1 head romaine lettuce, chopped 1 avocado, sliced Dressing/Marinade 3-4 tablespoon olive oil 4 tablespoons lime juice cup cilantro, chopped 2 cloves garlic, minced 1 teaspoon brown sugar (optional) 1 teaspoon red pepper flakes 1 teaspoon ground cumin 1 teaspoon salt Instructions: Whisk all the ingredients for the dressing/marinade in a medium bowl.Pour half the mixture onto the chicken breasts and coat chicken breasts with the marinade well.Cover and place in the fridge for 30-minutes or up to 24 hours or use immediately.Reserve the rest of the marinade for later to be used as a dressing. Heat a large heavy-duty pan or skillet to medium-high heat for 2 minutes.Add a teaspoon of oil to the pan and then add in the chicken breasts.Cook 4-5 minutes per side or until cooked through.Remove from pan onto a cutting board and cool for 5 minutes then slice or chop into bite size pieces.Add the sliced bell peppers to the pan.cook on high for 1-2 minutes or until charred. Divide romaine lettuce into two salad bowl.Top each salad with half the chicken, fajita veggies, and sliced avocado.Serve with reserved dressing and sour-cream if desired. 10.01.2022 Teriyaki Grilled Chicken and Veggie Rice Bowls. This one is a bit more complicated than usual but soooo worth it Ingredients (4 servings):... Teriyaki sauce, 1/2 cup low-sodium soy sauce, 1/2 cup water, 3 Tbsp packed light-brown sugar, 3 Tbsp honey, 3 cloves crushed garlic, 1 Tbsp minced ginger, 1 Tbsp rice vinegar, 1 and 1/2 Tbsp cornstarch, Chicken, veggies and rice, 3 and a 1/2 Tbsp olive oil, (plus more for brushing grill), 1 1/2 lbs boneless skinless chicken breasts, ground black pepper, 1 medium zucchini, diced into half moons and quartered (1 1/2 cups), 1 and 1/2 cups matchstick carrots, 2 and 1/2 cups small diced broccoli florets, 1 and 1/2 - 2 cups basmati or brown rice, sesame seeds. Directions: For the teriyaki sauce: In a small saucepan whisk together low-sodium soy sauce, 1/4 cup + 2 Tbsp of the water, the brown sugar, honey, garlic, ginger and rice vinegar. Bring mixture to a light boil over medium-high heat. Whisk together cornstarch with remaining 2 Tbsp water, then add to sauce mixture in saucepan. Reduce heat slightly and allow to boil 1 minute, stirring constantly. Remove from heat, set aside. For the chicken: Brush both sides of chicken with 1 1/2 Tbsp of the olive oil and season pepper (you won't need salt since the teriyaki sauce is plenty salty). Preheat a grill over medium-high heat (to about 425 - 450 degrees). Brush grill grates lightly with oil then grill chicken until centre registers 160 - 165 degrees on an instant read thermometer, about 4 minutes per side. Remove and let rest 5 minutes then dice into cubes. For the veggies: Heat remaining 2 Tbsp olive oil in a saute pan over medium-high heat. Add zucchini, broccoli and carrots and saute 4 - 5 minutes until crisp tender. To assemble bowls: Layer rice into 4 bowls then top each with 1/4 of the chicken and 1/4 of the veggies. Drizzle desired amount of teriyaki sauce over tops (you'll have extra left over - use it for chicken or salmon the next day), sprinkle with sesame seeds. Serve warm and enjoy. - Eamonn :)
