25.01.2022 Tonight, participants in my class will learn to make that gorgeous soft, chewy, oily type of bread called foccacia. They will eat one that will be topped with tomatoes, fresh oregano, salt, chilli flakes and oil. It will be freshly baked and they will enjoy it steaming hot. Foccacia is thought to have originated in Central Italy and is an early version of pizza. I can't wait to share with my class:

Her family gobbled everything up, she felt immensely satisfied to cook a simple, delicious, inexpensive meal for them. That's the main objective of my classes - make beautiful food within everyone's reach.
21.01.2022 Italians are not really big on dessert. Sure, they make great cakes, biscuits and sweets, but these are often served for brekky ( biscuits) and afternoon tea ( cakes and sweets). Traditionally, fruit finishes off the meal. But we're in Australia and so we serve a little sweet something to finish the repast at Cucina. This month it's as light as a cloud, as refreshing as a splash of icy water, as palate cleansing as a burst of peppermint, and as smooth as silk. It's our mint ...and chocolate Panna cotta. 17.01.2022 Today I'll be cooking Spaghetti Bolognese, Spaghetti with Lentil Bolognese, and Bolognese sauce over Garlicky Vegetables. These menu options easily satisfy the meat eaters, vegos and vegans, and the low carb eaters in my team at work. Here at Cucina we attend to all dietaries too. If there's something you don't eat or like, say garlic, we will cook your food without garlic. The beauty of our kitchen, style of menu, and our best practice, is that everything is prepared fresh on Saturday for Saturday night service and we do it all again, rising at 5 am, for Sunday lunch. All our food is cooked fresh by us on the day of service. There is no brought in sous vide meats that just need warming up and saucing. We do everything here - we are the chefs, cooks, creators of your meal. And it shows - you all just keep coming back for more.

14.01.2022 I'm here at the home of Sue and Lee Young on 2000 acres 8 klms from Coonabarabran. I'm making a coffee and while I wait for it to percolate, I'm looking out onto rolling green hills dotted with the vibrantly coloured Patterson's Curse. Last night we dined on what Sue called Yellow Belly or Golden Perch - a native Australian fresh water fish. It was delicious. It didn't have any muddy flavours because it had been caught in the winter months by Sue's uncle Bob. I was thrilled t...o try this ' bush tucker. With the leftovers, for lunch today, I'll make a delicious fish salad. Last time I was here, they went and shot a few rabbits for me to cook up. I cooked a rabbit stew that everyone enjoyed - no one eats this stuff anymore. Farmed rabbits cost $50/ kg, if you can find them. Wild rabbits cost about $25 each, if you can find them. We keep on reducing the availability of foods available to us. It's up to us to educate, ask for that unusual ingredient, have cooking programs/ shows that showcase uncommon foods, and use everything that's edible. We wouldn't have any risk of food shortages if we learnt to eat what this wonderful country gives us. See more
13.01.2022 This is perfect weather for comforting, warming hearty soup. Tonight I'll be making a yummo Neapolitan Lentil Soup. It's easy as. It satisfies everyone and it's delicious. People have commented that they didn't think lentils could taste so good. Even to this day, my kids love it and cook it in their own homes. For 4 serves 1 cup green lentils 2 - 3 cloves garlic, whole... 1 cup chopped celery leaves 1/2 teaspoons pepper 2 teaspoons salt 4 cups water 1/4 cup the best extra virgin olive oil Put all these ingredients in a medium size pot. Bring to the boil. Lower heat and simmer 1 hour with the lid on. Leave on a low simmer until 10 mins before dinnertime. At some stage, squish the garlic cloves with the back of a wooden spoon to melt the garlic into the soup. Ten minutes before dinner, increase heat and add 1 cup short pasta pieces. Cook until tender. Serve with grated Parmesan on top.

09.01.2022 Good morning! It's sunny and cold outside, I'm sitting inside drinking my coffee and thinking about writing this post on food. You know, it's a wonderful time of year for vegetables. I wrote about artichokes, salsify and, just yesterday, my fruit and veg man dropped off a box of white asparagus. He said there's plenty at the markets but at $160 per box, they mainly go to top end restaurants. I think they work out to be $10 per spear. They are definitely not cheap. But they ar...e utterly delicious. This week I gave a zoom class on making cooking fun and one of my main points was to treat yourself to those expensive, rare taste sensations every now and again. The earth gives us some truly fascinating riches that are worth savouring. I suggested squeezing them into your food budget by eating less junk food, cooking as many meals as you can from scratch, and ditching all manufactured heat and serve meals. A presto! See more
08.01.2022 It'll be raining this Saturday; kiddies sporting activities will be cancelled, it'll be too wet to potter in the garden, we've been housebound all week due to the rain....so, here's an idea!...come out for lunch and enjoy a long slow lunch. 07.01.2022 When we started Cucina we had a beautifully bountiful vegetable garden. We grew lots and included our produce in our monthly menus. Over the past few bone dry years we just haven't been able to justify robbing Peter to pay Paul ( using precious town water to keep it all growing....hardly sustainable, don't you agree!?). But now, that the rain's come, it's a totally different story. We're out there everyday tilling, weeding, planting, sowing, staking, planning and getting excited at the transformation. At the moment we are picking artichokes from huge plants, harvesting shallots and I munched on the first young and tender broadbean pods yesterday. Orchard Hills hasn't looked this green for years.
