21.01.2022 Glorious spring day and time to turn the veggie patch over for more planting when the ground heats up. There are just a couple of cauliflowers left from the winter veggies and the broad beans are coming through now. We like to add a good quality fertiliser like Rooster Booster available from Bunnings(similar to Dynamic Lifter)along with our own compost and this year we have also added mushroom compost. Our Jack Russell Stella just loves all the smells and gets right into the thick of it all. We let the ground rest for about a month at least and this gives it time to develop nutrients. No Italian garden is complete without tomatoes and basil over summer so we will be selecting a variety of tomatoes to plant in the months ahead. 21.01.2022 A version of sweet and sour Sicilian meatballs( polpette agrodolce). First time for this recipe and it’s a definite winner. Make sure you have bread to mop up the juices from the pan and your plate. Recipe is below: 500g beef or mixture of pork and beef Chopped parsley salt and pepper 1/2 cup grated pecorino cheese 1 egg... 1 cup of fresh breadcrumbs soaked in milk to soften 1/2 cup each of sultanas and pinenuts 1 glove of garlic crushed 1/2 chopped onion. Combine all ingredients and shape into meatballs and cook in a little olive on the stovetop. When cooked through remove from pan and add 1/4 cup each of balsamic and white vinegar and brown sugar and stir through the juices left in the pan to create a thick syrup sauce. At this stage add the cooked meatballs and coat with sauce and add a few extra pinenuts too. It is lower in gluten than wheat flour and more nutrient dense. Did you know Marinara is historically just a sauce from fresh tomatoes, olive oil , garlic and herbs that originated in the times of Marco Polo and cited to have originated either in Naples or Sicily from sailors. It’s believed the sailors used these ingredients because they didn’t spoil on ships and was quick to make for the hungry men. Today we refer it to as a seafood sauce. A seafood sauce is also referred to as Pescatore( which means fisherman). The pasta dish can also be made in Bianco(white) which is made without tomatoes and with olive oil and white wine. 02.01.2022 The smell of this sugo al ragù would waft through our house most Sunday mornings when we were young. A slow cooked meat sauce usually made with oyster blade or gravy beef & mamma would add meaty pork ribs too. The meat was either shredded & put bk into the sugo or used as a second course with salad.
