23.01.2022 Mini Christmas Puddings Christmas is well and truly on its way and with 4 sleeps left until the big man arrives, our house is bustling with Christmas cheer! Today we made mini Christmas Puddings (both brandy and kiddie friendly versions) So easy to make! . 700g Dark Fruit Cake 120g Cadbury Dark Choc Baking Chips 70ml Organic Orange Juice (Optional)... 3 Tbs Vecchia Romagna (Brandy) 150g Cadbury White Baking Chips Red M&Ms Green M&Ms . Crumble the cake into a large bowl then melt the chop chips and mix together Add the orange juice OR brandy and mix well With moist hands, roll small balls and place on baking paper Melt white chocolate, place into a piping bag and pipe onto your xmas puddings. Decorate with M&Ms and allow the chocolate to set for 20mins. 22.01.2022 Tonight I made Gennaro Contaldo's Pollo alla cacciatora (Hunter's chicken) from his book Slow Cook Italian. I love the flavours of this dish using many herbs such as basil, parsley, rosemary, thyme, sage and bay leaves slow cooked in a heavy pot with wine and chicken broth.... why is this so sooo good! 19.01.2022 Our first seasonal soup for this year now that we're mid Autumn. After all this beautiful weather, the cold just crept up on us a few nights ago and it was cold! But we had Minestra! so not all was lost. I love this rich soup, full of flavour from whatever veggies you have in your kitchen. I also added some spinach, lentils, cannellini beans, and chickpeas along with some gorgeous lamb shank and chicken on the bone full of nutrients. Like a warm hug in a bowl #minestra #zuppa #mangiamo

18.01.2022 Who doesn't love zucchini flowers? I usually pick the male flowers early in the morning after the bees have been given time to pollinate and then make fritters so they don't go to waste. This time I also picked some females with baby zucchini's attached to stuff with a ricotta mixture and cooked in homemade sauce. Seriously lovely #cucinacalabrese

14.01.2022 Pupe di Pasqua Recipe 340gm flour 2 tsp baking powder... 100gm sugar Grated peel of 1 large organic orange 1 egg 65 gm butter cubed 80 ml milk 1 sachet Paneangeli Lievito Milk wash 1 egg 2 tbs milk 1. Mix flour, baking powder, sugar & orange. 2. Add egg, butter and milk 3. Knead together for 15 mins. The mixture will seem dry but will come together after a few minutes. If it doesn't, add a little more milk. 4. Wrap in cling film and refrigerate for 1 hour 5. Roll out on floured surface and cut shapes as desired 6. Brush with milk glaze and bake for 25mins at 170C. 12.01.2022 This years Easter marzipan lambs (Agnello di pasta di mandorle) ready to be shared tomorrow (and two smaller ones for the Nonni to take home). The lambs represent Jesus, the lamb of God, his suffering, death and ultimately his Rising on Easter Sunday. This beautiful tradition is slowly disappearing but not in our home, where my babies are so delighted to see what Mamma has created, it brings me so much joy to see their little faces of delight. We also made our family recipe ...for Cuzzupe Calabrese (Calabrian Easter cakes). I love our recipe so much! It is more of a biscuit than a bread and my two will eat them as soon as they cool out the oven! (Its hard to have them wait till Easter Sunday, so I make sure there are a few extra over the Easter holiday). This year my little ones made these all by themselves. They watched me make one and then made their own. 11.01.2022 Our Christmas baking has started with a batch of the best honey gingerbread ever made. Our family gingerbread recipe is a perfect blend of spices and sweetness in a gorgeous soft cookie. They are so easy to make and never last long! Give them a try and let me know if you love them as much as we do The Best Honey Gingerbread 100g butter... 200g honey 120g brown sugar 460g Organic Spelt flour* 1 tsp baking powder 2 tsp ginger powder 2 tsp mixed spice 2 tsp cocoa powder 1 vanilla pod, seeds 2 large freerange eggs * Plain flour may be substituted 1 for 1 with Spelt flour. 1. Place the honey, butter and brown sugar into a small saucepan and stir regularly over a low to medium heat until small bubbles start to form. 2. Set aside to allow the honey mixture to cool. In a large bowl, mix together the flour & baking powder, spices and lastly eggs. 3. Pour the honey mixture in gently and stir with a wooden spoon until all ingredients are well mixed. 4. Heap the dough onto a sheet of cling film, wrap and place in the fridge for 3 hrs. The dough will seem quite moist but will firm to the perfect texture. 5. Preheat your oven to 160C (fan-forced) and line two cookie trays with baking paper. 6. Cut the dough into 2 or 3 pieces and roll out to approximately 8mm thick using a rollingpin. Using cookie cutters, place the cut outs onto the tray leaving 2cm spacing. 7. Bake for 8mins and allow to cool. Decorate with icing or simply dust with icing sugar. Enjoy!
10.01.2022 Simple lunch of pasta and home made passata while I'm busy making a unicorn cake for my bella's birthday. After a disastrous day of attempting meringues (apparently they are my kryptonite). They looked amazing and then went sticky even after baking for a couple hours and leaving in the oven all night so I've needed to resort to plan B and will be using marshmallows to decorate the unicorns mane ....atleast the golden horn and ears are working out! 02.01.2022 VEGAN TIRAMISU RECIPE! With Easter around the corner, I wanted to share a modern twist on a classic Italian dessert for my Vegan friends. Ideally you would make your own vegan Savoiardi biscuits, but if your time short, as most people are around Easter, you can pick up a packet of vegan & gluten-free Savoiardi at most specialty stores. Here is the recipe & Buona Pasqua! (Happy Easter!) ... I recommend using fresh organic ingredients where possible! 1 packet vegan & gluten-free Savoiardi biscuits Dipping coffee: cup freshly brewed organic coffee 4 tbs of organic sugar* (optional but please note that sugar must be organic to be Vegan) 1 tbs coffee liqueur (optional) Cream: 1 cups of raw cashews cup of almond milk 1 tsp vanilla bean paste 4 tbs organic powdered sugar (or use the sweetener of your choice such as Agave Syrup) 1 can coconut cream (chilled overnight) To serve: Cacao Powder To make the dipping coffee, brew (or add additional boiling water) to make of a cup. If you like, you can add 1tbs of coffee liqueur but thats completely optional. To make the cream, soften your cashews in boiling water for 10 minutes, drain & rinse. Blend until smooth & then add the almond milk, vanilla bean paste & sweetener until smooth. Meanwhile, drain the water from the can of coconut (you can keep this for your smoothies) and scrape the coconut into a bowl. Beat until smooth then gently fold in your cashew mixture. To assemble, you can either use a large serving bowl or smaller glasses for individual serves. Dip your Savoiardi into the warm coffee mixture one by one and place into your bowl as a single layer. Be generous with your coffee so that it soaks through. Add a layer of cream and another layer of coffee dipped Savoiardi. To finish, you can simply spread over another layer of cream and smooth off the top with a spatula or place the cream into a piping bag and decorate as you wish. Place in the fridge to chill overnight. To serve, place your cacao powder in a fine sieve and gently tap on the side with a spoon to dust your tiramisu.
