(Pick up at The Balcatta Warehouse or South Perth and save the Shipping) Preparation 90 minutes Servings 10 INGREDIENTS For the cake 125 g Culpepers Couscous 10 g melted butter 125 ml filtered citrus juice (about 2 limes + orange) 75 g Sugar ginger powder for the custard 3 egg yolks 30 g Flour 60 g Sugar 350 ml Milk 1 lime zest 1 cm Fresh ginger PROCEDURE Bring to a boil the citrus juice and pour it on the couscous, adding a pinch of salt, and let swell for 5 minutes Add the butter, sugar, a pinch of ginger, shell the couscous with a fork and let cool. In a saucepan, stir together the flour with the sugar, add the egg yolks and mix well. Add the milk little by little, stirring without forming lumps, add a small piece of ginger and the lime peel, put on the stove and bring to boil stirring constantly. When the cream thickens, turn off and let cool, stirring often. Once the cream has cooled down, add the mixture to the couscous and stir well. Pour into a baking tray lined with wax paper and bake in preheated oven at 175C for about 30 minutes. Let cool and sprinkle with coconut flour.

05.01.2022 We had a lovely lunch Yesterday curtesy of Culpepers providing their French Tri-colour Spirals and Bocelli’s cooking up a storm with 3 Mystery Pasta Dishes for us to try .. Prawn and Tomato , Vegetarian .. Mushroom , Spinach with a Creamy Potato Sauce and a Beef Ragu .. Delizioso!! The French Tricoloured Spirals are very ‘light on the tummy’ so even though we had a lot of Pasta .. we didn’t have that awful bloated feeling afterwards!
