21.01.2022 So, I sent all my crispy ‘Honey Gems’ home with my daughter and grandkids and made another batch this afternoon for my Son Ty, Taryn and Grace who are visiting tomorrow. 20.01.2022 Catering for a cupcake party? I never know how much icing to make!!! I had a big project for Matt and Leila’s wedding a couple of weeks ago...so... FYI - Buttercream icing made in my Kenwood Mixer - 3x 250g packs of softened Lurpak butter (this is the best brand to use for a paler buttercream icing) 9 cups of CSR Icing Mix, a dash of clear vanilla essence and milk. Beat butter til pale and creamy, gradually beat in icing mix. Add vanilla and beat several minutes till smo...oth. Add a little milk if needed or more icing mix for best piping consistency. This gives you a very full bowl of buttercream, at the max limit of my large stainless steel Kenwood bowl. (Other mixers may not cope with this quantity so adjust) I iced 94 cupcakes with this batch with a generous swirl of buttercream! (So you could almost guarantee icing 25-30 cupcakes with a single batch from 1 pack butter and 3 cups icing mix - depends on your piping, of course!) I also find this Pyrex Brand Cupcake pan the best one, by experience, for size, support for our Cupcake Papercraft pattypans, and easy cupcake removal. Purchased at Big W! Gender reveal water pistol battle in the park - Honey Joys, Chocolate crackles and Marshmallow Bubbles are so easy to make (and transport) in bulk for a large park gathering on a hot day!!! Tip when using white or pastel patty pans - use two for a purer stronger colour.

11.01.2022 My Grand-daughter, Imogen, chose a Pink ‘Rose Garland’ Wrap with a Baby Blue Cupcake Patty Pan for her 12th Birthday ‘Cupcake Cake’ Party in the Park. They were plain Vanilla Cupcakes with a 1M piped swirl. I tried out a Sweetened Condensed Milk Buttercream for the first time. I must admit I was skeptical, but it had a lovely smooth, velvety texture for piping, with a lovely sheen and great if you want a ‘non-sweet’ frosting. I admit I had to add a 1/4 cup of icing sugar to sweeten it up a little. I am not really a fan of frostings using vegetable shortening (In this case 250g butter & 120g shortening but absolutely necessary for stabilisation with the chilled can of Sweetened Condensed Milk).

10.01.2022 Our Australian Made pattypans come in 16 glorious colours!! For a great School Holiday activity make a batch of ‘Honey Gems’! I have been making these Cornflake treats for 50+ years and only recently discovered that using small tongs to fill the patty cases was quicker, easier, less messy and far more efficient than filling the patty pans with a spoon! Even my Grandson Finn, at 3 3/4 years could do it without making the usual mess!!! Rather than hunting for my well worn..., hand written recipe I googled and did a double batch of the ‘Taste’ recipe. The newer recipes seem to use less sugar and honey than my original, and it is a simple melt, mix and bake recipe making approx 30 delicious crispy Gems. I am now waiting for my Daughter and 4 grandkids to arrive! Will have to make another batch tomorrow. Just as well I bought the BIG box of Cornflakes!!! www.cupcakepapercraft.com.au See more
