16.01.2022 How to adjust the BAKING time for mini cupcakes? Keep temperature the same as baking standard size cupcakes. We recommend 160 degrees Adjust the baking time for mini cupcakes to 12-15min depending on your oven and recipe. ... We recommend checking the mini cupcakes after 12min with a toothpick or skewer to see if the batter is still wet. Bake for an additional 2min if still wet. Once out of the oven, DON’T leave the cupcakes in the baking tin for long!!! Transfer to cooling rack as soon as possible. When cool, decorate with your favourite buttercream Enjoy

12.01.2022 A lot of people have asked where my interest in baking came from. Well, I’m actually interested in all types of cooking! But baking became a necessary skill to perfect once I was diagnosed as being gluten intolerant. There simply wasn’t gluten free bread, cakes, or pastries around back in those days. Some of my earliest memories are cooking with mum. She was a great home cook and had a go at everything from cakes and cookies to soups, stews, and roasts. I vividly recall climb...ing onto a chair so I could see what mum was preparing on the kitchen bench. She’d set me to work with a handheld egg-beater which quickly became my favourite kitchen tool. Whenever she was making cakes, cookies, or even an omelet my job was to beat the eggs. Over time I graduated to operating a Kenwood bench mixer. But that was a bit of a pain because it was a big job to clean. I preferred to keep it simple by using the egg-beater, a wooden spoon, and a bowl. Learning to cook at such a young age didn’t seem like it was anything special. I just wanted to know what mum was doing. And getting to use a handheld egg-beater was fun! But, by the time I was in high school, I realised that knowing how to cook some basic dishes was a rare skill. It surprised me but some of my friends had never even fried an egg before. Fast forwarding a few years I’ve come to realise that those basic skills mum taught me came in handy over and over again. There’ve been many times during preparation for a dinner party that I’ve had feelings of déjà vu. I may have been in a different kitchen and I no longer need to stand on a chair to reach the bench but the mixing, slicing, chopping, and cooking brings a flood of memories back to me. Over the years I’ve worked in many restaurants with many chefs and continued to learn new cooking methods and styles. I’ve learned from award winning hatted chefs as well as fantastic street cooks. I’ve adapted recipes and developed my own. But I’ll always remember my cooking journey started with the most inspiring cook I’ve ever known my mum.

02.01.2022 The most common question we get asked about our products is - IS THIS GLUTEN FREE? Yes! We are an exclusively gluten free bakery and ALL our products are gluten free. Gluten is a PROTEIN found in grains such as Spelt, Wheat, Barley and Rye. These grains are used to make conventional flours used in baking. These are NOT safe for coeliacs or those with gluten sensitivity.... However, we use a variety of SAFE grains and flours that can be consumed by our coeliac and gluten intolerant customers, such as: Rice flour Corn flour Buckwheat flour Tapioca flour Actually, Buckwheat is not a wheat or even a grain (go figure given it’s called a wheat ) but that is a post for another day.
