Almost overnight all of our events disappeared and this has left a lot of small businesses, their staff and the businesses in their supply chain in an extremely vulnerable position. We had to think outside the box and find a way to help support my staff and our suppliers to survive this pandemic. Concept by BBQ Events Australia and executed by @rib_racks_bbq Big thanks to our suppliers for what was another successful event. ... Featured was the Japanese A5 put up against the Australian 2GR 9+mb Brisket both sourced from Mondo Butchers - Mondo Di Carne (World of Meat) Verdict.... The A5 flat is not suited to the low n slow style of cooking. Fat richness and flavour is lost over time during the longer cook, still a great flavour and cut but just didnt get the "wow" factor that other A5 cuts give when done hot and fast. Entree Glacier 51 Toothfish served 2 ways.. *Charred corn salsa and spicy white sauce served in a soft taco with spicy white sauce by @rib_racks_bbq *Soy salted then smoked fillet served on it's own in flakes.. Verdict... Both dishes an absolute hit with our guests but the Soy Salt flakes won hands down. That unique flavour and texture of the Glacier 51 was able to shine though whilst having a slightly salty umamai flavour. Dessert Our very own Matthew Price came up with this one for Justin and he smashed it out of the park. I was worried that it was going to be too sweet for our guests but plates were licked clean. Dessert consisted of salted caramel chilli popcorn, smoked pineapple, coconut mascarpone cream drizzled with @blendsmokedhoney , great way to round out the evening if you have a sweet tooth! Big thanks to Cupid Catering for running with us to put on this event, we may have found a new home
