18.01.2022 Interesting read about Biryani: Biryaani used to be a kind of 'fast food' for the soldiers of Babur's ('Babber Sher' or Tiger) Army. The Chief cook of Babur's army was known for his 'creative' ways of cooking. He used to 'use' the injured / dead horses and camels that were a part of his army while cooking dinner for the troop at the end of a hectic day. He was known for his skills of 'less time consuming' ways of cooking also. The word biryani comes from the Persian word b...irian which means 'fried before cooking.' One could conclude that the biryani originated in Iran (modern day Persia). The aromatic spices specially Cinnamon, Nutmeg, Cloves and Bay-leaves are chiefly used. When the British deposed Nawab Wajid Ali Shah to Kolkata (formerly Calcutta), the Calcutta biryani was created. Nizams governing small territories in Northern India encouraged regional variants like the Hyderabadi biryani and the Arcot Nawab biryani. Biryani recipes of the Mughals (the Persian of 'Mongols') can still be found in places where their empire had a foothold.
