22.01.2022 This weeks Winter Warmer is another classic SLOW COOKER IRISH STEW This simple and delicious hearty Irish Stew is that easy you can set and forget in your slow cooker. Then come home later to a delicious smelling dinner.... Ingredients 1/2 cup plain flour 1 pinch salt and pepper 1 1/5 kg lamb forequarter chops, cut in half 3 tbs vegetable oil 3 onions, sliced 3 carrots, peeled and sliced 1 swede, peeled and diced (optional) 1 tsp dried oregano 1 tsp dried thyme 3 tbs tomato paste 3 cups Massel Beef Style Liquid Stock 1 kg potatoes, peeled and thickly sliced 1/3 cup parsley, chopped Method 1 Place flour, salt and pepper in a bag with the lamb chops and shake. 2 Heat oil in a frying pan and sear chops on both sides. 3 Place chops in slow cooker with potatoes, carrots, swede and thyme. 4 In the same frying pan, cook the onions for 3 minutes and then add the tomato paste, cooking for 2 minutes. Add the stock to the pan and bring to the boil. Pour into the slow cooker. 5 Cook on high for 4 hours or low for 8 hours. Remove bones before serving and stir through parsley.

SLOW-COOKER BEEF SHORT RIBS WITH GINGER-MANGO BARBECUE SAUCE Combine juicy mango and classic barbecue sauce for an unexpected tangy addition to melt-in-your-mouth slow cooked Boneless Beef Short Ribs.... INGREDIENTS: 1.5kg beef Short Ribs Boneless, cut 2 x 2 x 4-inch pieces 1-1/2 cups diced fresh or jarred mango, drained 1 medium onion, chopped 1 tablespoon minced fresh ginger 1 cup hickory-flavored barbecue sauce COOKING: Place beef Short Ribs, mango, onion and ginger in 5L slow cooker. Add barbecue sauce. Cover and cook on HIGH 5 to 6 hours or LOW 7-1/2 to 8-1/2 hours or until beef is fork-tender. (No stirring is necessary during cooking.) Remove short ribs, season with salt and pepper, as desired. Skim fat from cooking liquid; serve over short ribs. ALTERNATE COOKING METHOD: This recipe can be made in a 5L electric pressure cooker. Place beef Short Ribs and onion in pressure cooker; add 1/2 cup beef broth. Close and lock pressure cooker lid. Use beef, stew or high-pressure setting on pressure cooker; program 60 minutes on pressure cooker timer. Meanwhile, combine 1-1/2 cups mango, ginger and barbecue sauce in medium saucepan. Simmer 20 to 30 minutes until desired thickness is reached. Use quick-release feature to release pressure; carefully remove lid. Continue as directed in Step 2. Serve ribs with prepared sauce.

17.01.2022 Cook up this weeks Winter Warmer with one of our Legs of Lamb on special for $14.99/kg (save $3.00/kg) Roast Leg of Lamb Ingredients... 1 1/2 kg lamb leg 1 splash olive oil 2 tbs Capilano* Dark & Bold Honey 2 tbs wholegrain mustard 4 sprigs fresh rosemary *to taste *optional *Capilano is recommended by Australias Best Recipes Method Use a knife to make small cuts in the meat. Rub oil into meat. Mix mustard and honey together, then baste the meat with mixture, pressing into the cuts. Insert sprigs of rosemary into the cuts. Bake at 180C for 1 hours for medium-rare meat. Rest meat in aluminium foil for 15 minutes before carving.

12.01.2022 This weeks Winter Warmer is easy to make and also one that can be made into many different dishes Great for meat pie filling, spaghetti sauce, spread over a pizza base and add cheese. SLOPPY JOES SLOW COOKER 500g beef mince... 1 onion, diced 1 tsp garlic, crushed 1 red bell pepper, diced 2 tsp Worcestershire sauce 2 tsp Dijon mustard 1 Tbsp brown sugar 1 cup ketchup In a frypan over high heat, brown the beef mince. Once browned, drain off the excess fluid and transfer it to a slow cooker. In the slow cooker, add the rest of the ingredients. Cook on low for 6-8 hours. Serve & Enjoy.

10.01.2022 This weeks Winter Warmer is Beef braciole Italian beef rolls) Italian-style steaks rolled up with herb and pine nut filling and prosciutto.... INGREDIENTS 6 x 1cm-thick slices beef scotch fillet or topside steak, trimmed 2 tablespoons finely chopped flat-leaf parsley 2 garlic cloves, crushed 2 tablespoons finely grated parmesan cheese 2 tablespoons toasted pine nuts 6 slices prosciutto, halved widthways 2 tablespoons olive oil 1/2 cup (125ml) dry red wine 2 cups tomato passata (see note) (sieved tomatoes) 1/4 cup sliced basil leaves, shredded Salt, to season METHOD Step 1 Using a meat mallet or a rolling pin, pound the steaks between sheets of baking paper to about 5mm thick. Cut steaks in 2 widthways. (You can ask your butcher to do this for you.) Step 2 Combine the parsley, garlic, parmesan and pine nuts in a small bowl and season with sea salt and black pepper. Step 3 Lay the prosciutto slices over each steak and scatter with parsley mixture. Roll up to enclose and secure with toothpicks. Step 4 Heat the olive oil in a large frypan over medium-high heat and cook the rolls for 3-4 minutes, turning, until browned all over. Transfer to a plate and cover loosely with foil. Step 5 Add wine to hot pan and boil until reduced by half. Add the passata and bring to the boil, then simmer over low heat for 5 minutes or until thickened. Season to taste with sea salt and freshly ground black pepper. Return rolls and any juices to pan, then scatter with basil and cook for 3 minutes or until heated through. Slice rolls in half and serve with salad and crusty bread.

04.01.2022 This weeks Winter Warmer is Stuffed Chicken Breast with Bacon Ingredients... 2 chicken breast fillet fat trimmed halved 2 tbs basil pesto 3 slices tasty cheese quartered 3 bacon rashers rindless 2 pinches garlic salt 2 pinches chives 2 1/2 tbs extra virgin olive oil Method Slice each chicken breast piece horizontally in half and open out flat but dont cut all the way across. Sprinkle one side of each with garlic salt and chives. Spread pesto over one side and cover with cheese slices. Close chicken breast pieces up carefully. Wrap each chicken piece with a rasher of bacon by hand, ensuring the filling doesnt fall out. Heat a heavy-based pan with enough oil to reach about 3-5mm high up the sides, When hot, place chicken parcels in pan and turn 3-4 times until cooked through and browned on the outside. When turning in pan, lift each chicken piece from the under-side with a wide, flat utensil so the filling doesnt fall out. Serve hot with a side of veggies
