16.01.2022 Another big week! First of 2 posts.

15.01.2022 And my 4pm class, adults if you didn't notice, missed a couple here too!

15.01.2022 This isn't weird, but it is good to know. That gross looking pile in the picture is cullinary gold. They are what's left after you squish out all the lovely roast garlic to make aioli. They go into the freezer to be used in the future. I'll chuck some, probably all, into a stew or curry or pasta sauce maybe. Completely ups your cooking game, so much flavour! Don't forget to fish them out before serving though. They sometimes cook apart into lots of pieces so if you are organ...ised, it's a good idea to boil in water or stock, strain and put the liquid in your meal or in the freezer. Roasting garlic is super easy, l just wrap however many bulbs together in foil and put that into an oven safe container. I like to cook it for a couple of hours on a low heat. If you are slow cooking a roast it's the perfect time to do a big lot of garlic. I am going to confess something now, and a lot of you will give me a pooh pooh face.... l quite often put cakes in the oven while the garlic is in there! Some CWA ladies shouted me down over this once, but I have never had a cake come out tasting or smelling of garlic. I do cover the tins with foil for the duration of cooking, whether that is what protects it, who knows? Anyway, l digress. Upon cooling it will really start to smell, you can wrap the whole foil pack in a plastic bag and store in the fridge or freezer until you need it, or take them out of the foil and put in a screw top jar in the fridge. You can fill the jar with oil if you want some lovely infused oil too, but you don't need to, the garlic will keep ( and get more delicious) for a very, very long time. Cooking garlic low and slow develops the sugars and makes it sweeter. It will still smell, but it is a lot mellower and won't give you dreadful garlic breath. That gross breath is from eating raw or very quickly cooked garlic. See more

10.01.2022 1st class this morning. Doing animal gingerbread biscuits with real littlies. A bit like wrangling snakes, lol! A good time was had by all, especially when they were allowed to eat them.
