19.01.2022 HAND MADE WITH LOVE Despite being closed due to COVID-19 (we hope to reopen before September school holidays) our fruit orchard has continued to produce. All our organic fruits are hand picked and processed to ensure they are harvested at the perfect time to maintain freshness and nutrients. Here we are processing Yellow Sapote, a fruit from South America. The yellow flesh has a sweet earthy flavour and in ice cream it contains hints of creme brulee !

09.01.2022 T E A M W O R K Green tree weaver ants are masters of cooperation, even going so far as building bridges and ladders using their own bodies as the structure. To do this they grip on to each other’s petioles which is the ant equivalent of a waist. The result is a ‘living bridge’ as shown in this pic. Isn’t nature amazing?! Jake Crosby
