18.01.2022 Chocolate raspberry brownies. Ingredients 1/4 cup olive oil 225g dark chocolate... 3/4 cup caster sugar 2 eggs 2 tsp vanilla extract 1/4 cup plain flour 1/4 tsp fine sea salt 1/4 tsp baking powder 2 tsp expresso powder 3/4 cup fresh or frozen raspberries Method 1. Preheat oven to 160 Celsius. Grease and line a 20cm (8",) square cake pan. 2. Place dark chocolate and olive oil in a heatproof mixing bowl. Place bowl over a saucepan with simmering water. When chocolate has melted whisk in caster sugar. Whisk until sugar has dissolved into the chocolate mixture. 3. Remove from heat. Whisk in egg, one at a time. Whisk mixture until fully combined before adding the other egg. Whisk in vanilla extract. 4. Whisk in dry ingredients until well combined. Scrape brownie mixture into prepared cake pan. Use scraper to spread the mixture evenly into the pan. 5. Sprinkle raspberries over the top of the brownie mixture. 6. Place in oven and bake for approximately ,30 minutes or until cooked through. Brownie will look a bit underdone. 7. Rest in cake pan for at least 30 minutes before cutting into squares. Enjoy!
