07.01.2022 As a Commercial fisherman, I have had quite a few years of experience catching and processing these fish. This started during the Millennium drought where Lake... Albert was cut off from the rest of the system and my community feared a fish kill was imminent. At that point, like every one else, I thought that these fish were crap (yes, I know. I thought I'd get that pun out of the way first). I came to realise, however, that the first issue of taste was looking after the fish in the first place. The muddy taste everybody talks about is from a stress hormone. If you don't stress the fish, you don't get the taste. So DO NOT stab, bleed, gut, hit, or leave fish out of ice slurry. All of these things stress the fish. Ice slurry should be used for any fish and is made by mixing one part water with two parts of ice pieces no larger than what you would put in your drink. Leave for a day to set, much like beef or lamb, before filleting. Which brings up the other complaint of it being bony. I have a video of processing that anybody should be able to follow. Google Carp filleting and look for Coorong Wild Seafood. We supply the Fine Dining market and five star chefs use it. These people are at the top of their game. So while I understand that many have either had a bad experience, or have heard that these fish are crap please keep an open mind and try to consider the logic of this. It is the most eaten fish in the world and contrary to popular myth, is NOT exclusively a product of third world countries. England, Germany and France being some of these Countries. Also, unlike other Native species, looking after stock numbers is NOT a requirement and so from a sustainability point of view harvesting of this fish is GOOD for our environment. Have a try if this fish, but make sure these quality steps have been followed. Alternatively, buy direct from Coorong Wild Seafood or any place that stocks our products. But look for our label.
