21.01.2022 SWEET POTATO & KALE STRUDEL who doesn’t love a good strudel! It’s so delicious Enjoy ... Sweet Potatoes Australia 300g sweet potatoes, peeled & chopped into 2cm pieces 300g kale 1 tbs extra virgin olive oil 1 tbs butter 1 onion, finely chopped 300g mushrooms, sliced 180ml crème fraîche 20g parmesan, grated 140g gruyere cheese, chopped into very small pieces 1 tsp ground nutmeg tsp salt & cracked pepper 8 sheets filo pastry 80g butter, melted tbs poppy seeds Method 1. Heat the oven 180 degrees C 2. On a baking tray add some olive oil & sweet potatoes, bake until tender remove & place into a bowl 3. Remove the leaves from the kale stems & roughly chop them 4. Heat the oil the butter in a pan, then fry the onion, kale & mushrooms for about 10 mins until soft & the water from the pan has evaporated - Add this to a large bowl 5. Add the crème fraîche, parmesan, 100g of the gruyere cheese and the nutmeg to the bowl with everything & stir well season with a good amount of salt & pepper allow to cool slightly 6. Melt the butter. Lay a sheet of filo on a large baking sheet 7. Brush lightly with melted butter, then put another sheet on top. Do this until you have 8 layers of filo. 8. With the long side of the baking sheet towards you, spoon the filling along the pastry, about 4cm in from the edge. Sprinkle the remaining gruyere cheese on top. 9. Carefully roll the filo and the stuffing into a fat log shape and tuck the ends underneath to seal 10. Brush the strudel with more butter, scatter over the poppy seeds and bake for 25 mins until golden brown

10.01.2022 SAUSAGE ROLLS A recipe we get asked for a a lot. Our household will be whipping these bad boys up tomorrow - are you?! Grab a pack of our very own Farmhouse snags from Coles to make them! Enjoy everyone ... SunPork Fresh Foods Three Aussie Farmers #danandstephsnags INGREDIENTS 1 x 500g packet of Dan & Steph Farmhouse sausages 1 packet of good quality puff pastry 1 carrot, peeled 1 green apple 1 onion 1/4 head of broccoli 1 egg 1 cup of cheese Pinch of salt 1 egg, beaten cup of parmesan, grated 2 rashers of bacon, finely diced Tomato sauce 1 tin of chopped tomatoes 1/2 cup of tomato paste 1/4 cup water 1/4 cup of vinegar 1/4 cup honey 1 tbs onion powder 1 tsp garlic powder 1 pinch salt METHOD 1. Sausage rolls - Preheat oven to 200 degrees C & line 2 baking trays with baking paper 2. Take the skins off the sausages & place into a large bowl 3. In a food processor using the grating blade, push through the carrot, onion, apple & broccoli 4. Pour these veggies on top of the pork mince & mix well together with your hands 5. Add egg & cheese mix again well 6. Your puff pastry will normally come in a big square, cut into 4 smaller squares 7. Take the filling and spoon it all the way down the middle of your pastry, then roll them up 8. Brush your sausage rolls with the beaten egg then sprinkle over the parmesan cheese & bacon pieces 9. Place sausage rolls into your preheated oven and bake for 25 -30 minutes until golden all over 10. Tomato sauce - Put all the ingredients in a pot and mix well on a medium heat 11. Simmer for 15 minutes then pure in a food processor

Heres the recipe for you all to enjoy Grab a pack of our very own sausages on the shelves at Coles ... Spicy Sicilian sausage cauliflower pizza Ingredients 1 cup pizza sauce 1/2 onion sliced 200g Sunpork bacon 4 sliced Dan and Stephs Spicy Sicilian Pork sausages (cooked left over ones) 200g bocconcini cheese balls 12 cherry tomatoes 1 cauliflower pizza base (or a flat bread or make your own pizza pizza dough - 1 1/2 cups plain flour, 1/2 cup SR flour, 1 tbs yeast, 1 tsp salt 1/4-1/2 cup water - mix all together to form a soft dough & allow to rest for 15mins the roll out & top pizza) Handful fresh rocket Olive oil Method Preheat the oven to 220C. Spray pizza tray with canola oil the place cauliflower base on tray Spread cauliflower pizza base with the pizza sauce then add the sliced onions, bacon , bocconcini cheese balls, sausage slices , cherry tomatoes and cook until golden and crisp (12-15 minutes).
