Be sure to try this heavenly recipe and share with your family & friends! recipe / photo credits : Matt Moran's Australian Food Piri-Piri Chicken with Smoky Tomato Aioli Prep Time: 15 mins Cooking Time: 20 mins Serves: 4 Ingredients 8 chicken thighs (skin on, bone in) Marinade 6 garlic cloves 4 long red chilies, coarsely chopped 200 ml beer 200 ml dry white wine Juice of 2 lemons, plus extra wedges to serve 2 tbs extra-virgin olive oil 4 fresh bay leaves 3 thyme sprigs, plus extra leaves to serve 3 tsp smoked paprika Smoky Tomato Aioli 100 g semi-dried tomatoes 2 garlic cloves 2 egg yolks 2 tbs red wine vinegar 1 teaspoons smoked paprika 220 ml olive oil 1 tbs lemon juice Method 1. To make the marinade, process the garlic and chilies in a food processor to a paste, then combine with the beer, wine, lemon juice, olive oil, bay leaves, thyme and paprika in a bowl and season. 2. Score the skin of the chicken thighs in several places, add to the marinade and mix well with your hands, rubbing the marinade into the cuts in the chicken. 3. Cover with plastic wrap and refrigerate for a couple of hours to marinate. 3. While the chicken is marinating, make the smoky tomato aioli. Process the tomatoes, garlic and egg yolks in a food processor to combine and add the vinegar and paprika. Process to combine then, with the motor running, gradually drizzle in the oil, a little at a time, until thick and emulsified. Add the lemon juice and 1 tablespoon hot water, process to combine and season to taste. 4. Preheat a barbecue to a mediumhigh heat. Drain the chicken from the marinade and barbecue, skin-side down to begin with and turning occasionally, for 1015 minutes until browned and cooked through. Set aside to rest for 5 minutes, then serve with the smoky tomato aioli and extra lemon wedges.

Roasted Salmon & Summer Veg Traybake With Basil & Mustard Yoghurt Cooking Time: 20 mins Serves: 4 Ingredients 400 g baby potatoes 200 g green beans 1 bunch of fresh basil 200 g cherry tomatoes 10 black olives (stone in) 4 x 120 g salmon fillets, skin on, scaled and pin-boned, from sustainable sources 1 lemons a small clove of garlic teaspoon Dijon mustard 4 tablespoons Greek yoghurt extra virgin olive oil Method 1. Preheat the oven to 200C. 2. Scrub the potatoes clean, halving any larger ones, then cook in a pan of boiling salted water over a medium-high heat for 10 to 12 minutes, or until cooked through. 3. Trim the green beans and add to the pan for the final 2 minutes. Pick the basil leaves. 4. Drain the veg and tip into a large bowl. Halve and add the tomatoes, then destone and add the olives along with half the basil leaves. 5. Add a tablespoon of olive oil, toss together and tip into a roasting tray. Shake into an even layer and season with sea salt and black pepper. 6. Place the salmon fillets into the bowl, add a tablespoon of olive oil, and squeeze in the juice of a lemon. Season lightly and toss to coat. 7. Lay the salmon fillets on top of the vegetables, skin-side up. Slice off 4 rounds of lemon and lay on top of the fillets, then roast for 10 minutes, or until cooked through. 8. To make the basil & mustard yoghurt, bash the remaining basil leaves in a pestle and mortar with a pinch of sea salt. Peel and add the garlic and bash again. 9. Scrape the mixture into a bowl and add the mustard, 4 tablespoons of Greek yoghurt and the remaining lemon juice. 02.01.2022 Oil in Salads Increases Absorption of Nutrients By MARY WEST Because nutrients in food work synergistically, eating a combination of certain foods is often more beneficial than eating them alone, and such is the case with drizzling oil over your salad. The oil boosts the absorption of eight micronutrients, according to new research published in the American Journal of Clinical Nutrition.... While soybean oil was used in the study, olive oil would be a better choice because of the numerous health benefits associated with it. Lead author Wendy White, an associate professor of food science and human nutrition also found that eating a salad without oil reduced the likelihood that the nutrients in the vegetables would be absorbed. The eight nutrients involved are needed for good health. They include four carotenoids: alpha-carotene, beta-carotene, lycopene, and lutein. The remaining three are vitamin K and two forms of vitamin E. The oil also aided in the absorption of vitamin A, which is made in the intestines from alpha and beta-carotene. Increased absorption of the nutrients produces important wellness advantages such as vision preservation and cancer prevention. Absorption of the nutrients correlated with the amount of oil added to the salad. This means that the more oil used, the better the nutrients were absorbed. The best way to explain it would be to say that adding twice the amount of salad dressing leads to twice the nutrient absorption, White said. Despite the findings, consumers shouldnt drench their greens with dressing, White cautioned. Instead, she recommends following the U.S. dietary guideline of including two tablespoons of oil per day in the diet. In the study, 12 college-age women ate salads with different amounts of soybean oil, which is a standard ingredient in salad dressings. Afterwards, the levels of nutrients in their blood were measured to determine how much was absorbed. The results showed those who consumed the most oil, which was a little over two tablespoons, absorbed the maximum amount of nutrients. For most people, the oil is going to benefit nutrient absorption, White said. The average trend, which was statistically significant, was for increased absorption. Although the study clearly showed that drizzling oil over salads presents an advantage, soybean oil may not be the best choice. According to Joseph Mercola, noted natural health practitioner, olive oil would be far more healthful. He warns that soybean oil contains highly processed omega-6 fatty acids, which promote inflammation, the condition underlying most chronic disease. Conversely, olive oil, a fat rich in antioxidants and important vitamins, has anti-inflammatory properties and may reduce the risk of chronic diseases like cardiovascular disorders and diabetes.
