25.01.2022 "Good meat only seems so expensive because we eat meat like children taking bites out of the middle of sandwiches and throwing the rest away. Theres not yet a cow with an eternal supply of steaks, a pig that is all loin, or a chicken that is all boneless white meat. Most meat on cows, pigs and chickens is bound in hardworking muscles, and we tend to avoid it because it needs to be coerced into tenderness. Luckily, those hardworking muscles are more delicious than the idle o...nes." Tamar Adlers beautiful words about cooking are much admired here on the farm, and we totally agree with her sentiments about how to responsibly eat meat. People often enquire about our home delivered beef boxes and whether we can customise cuts. Our response is that our boxes are based on a nose to tail ethos, the same as what Tamar writes about. All the cuts from across the entire animal are shared amongst the boxes being delivered to households that week. This means that our customers receive cuts they may not have tried before but most quickly learn all these cuts are full of flavour and go on a new journey into slow cooking. Of course, for people who just want particular Dandaragan Organic Beef cuts they can head to one of the many butchers, independent supermarkets and health food stores that stock our grass fed organic beef.

24.01.2022 It has been a crazy old year, and after much deliberation, we have decided to host the 2020 Farm Open Day on Saturday 12 September. Chef Stuart Laws is going to create an amazing paddock to plate experience for us all again and visitors will also get the opportunity to tour our organic farm. Tickets are open to just our DOB Collective members (you can still sign up to become a member) at this stage. Looking forward to another amazing day showing people around our organic farm and enjoying a paddock picnic like no other!

23.01.2022 Its winter, its cold and it is time for an old-time classic.... Beef Stroganoff, made with Dandaragan Organic Beef diced steak. The stroganoff has an interesting history, it is thought to have been named after Count Pavel Stroganoff, a Russian noble who was living the high life in the 1800s. Russian aristocrats would often hire French cooks and according to the cookbook A Taste of Russia, the original beef Stroganoff recipe derived from a basic French mustard for seasoning ...beef, combined with a dollop of Russian sour cream. In deference to his benefactor the chef named the dish after the Count. Beef Stroganoff had its heyday in the 50s and 60s but its reputation was tarnished by modern alterations such as adding canned cream of mushroom soup. None of that business here, our local Dandaragan foodie Jane Roberts has whipped up a Beef Stroganoff recipe that harks back to its traditional roots, and showcases the big beefy flavour of Dandaragan Organic Beef. 23.01.2022 It doesn't smell pretty but our composted chicken manure is the fuel that helps our big garden grow acres upon acres of organic pastures. Compost feeds the soil by building up soil biology and humus, enhancing water retention qualities and slow releasing nutrients to support plant growth. Our ethos is healthy soils, healthy plants, healthy animals, healthy people. Get the soil health right and we are most of the way there.

21.01.2022 Our eight legged friends have been busy garlanding the rushes in the creek paddock. A lovely sight on a cold, dewy morning.

19.01.2022 One of the last bonfires of 2020. Our region is on restricted burning now as the weather warms up and the paddocks dry out. For a second year in a row, the winter rainfall was lower than our historic average. This drying climate makes it more important than ever to work smarter in how we manage the land by adopting regenerative farming practices that help increase the water holding capacity of the soil.

19.01.2022 Farms are a bit like huge gardens. In our particular garden we dont use chemicals, fungicides or pesticides, instead we apply compost and other trace minerals, and all year round we make sure that the soil is covered so that our precious topsoil does not blow or wash away. We use animals to mow the grass but we never let them overgraze it. These animals push nutrients back into the soil with their hard hooves, feeding the billions of subterranean microbes, but we dont let... them stay long in the one spot because those same hard hooves do damage. We plant grasses that have long taproots that survive hot dry months, thrive on summer rains and push carbon deep into the soil. We choose this way of farming because we are growing food for people. 17.01.2022 Magic weather, fabulous food and beautiful guests helped make our 2020 Dandaragan Organic Beef Farm Open Day such a happy event this year. On Saturday we opened the farm gates to 50 odd visitors and their children to learn more about organic and regenerative farming and to enjoy a true paddock to plate experience. Chef Stuart Laws cooked our organic grass fed beef to perfection while visitors went on a bus tour around the farm and a short history walk around the 150 year old ...Noondel homestead. Was lovely to meet so many people who are care about their food and how it is grown, and to see so many kids playing around the farm. Thankyou to all the visitors who supported the event and to Lawsie, Jane Roberts for the amazing food, 14k Brewery and Bindoon Estate for the drinks and to all our unsung helpers. 17.01.2022 The farm is getting its winter coat on... misty mornings, dewy green grass and gentle afternoon sunlight. Looking forward to the July school holidays, its birthday season for the farm family so there will be a few bonfires with grilled DOB sausages, toasted marshmallows and mulled wine.

14.01.2022 Dandaragan Organic Beef just went through its annual Australian Certified Organic audit. It is when we sit down with an auditor and go through exactly how we have managed our land and cattle over the past 12 months. The ACO auditor checks the farm, finances, inputs and outputs and our supply chains. When you buy certified organic you can be assured that all operators with the BUD logo go through exactly same process. In a world full of marketing terms that confuse consumers, certified organic means no chemicals, no fungicides or insecticides, no hormones, no antibiotics, no synthetic fertilisers or GMOs. Instead it is a food production that is focused on linking: Soil. Plants. Animals. Food. People. Environment.

14.01.2022 The original section of the Noondel homestead, was built in the 1860s by Scottish born shepherd Ewen Mackintosh, who became an important pastoralist in the Dandaragan area, acquiring 40,000 acres in three separate leases in the 1850s-60s. The building he constructed on Noondel has an unusual shape featuring coursed random rubble construction with a steeply pitched corrugated iron hipped roof, which was originally covered in shingles. In the 1880s John Cook purchased the property and it has since housed generations of the Cook family.

14.01.2022 Visitors to the 2020 Dandaragan Organic Beef Farm Open day got to see first hand how an organic and regenerative cattle farm runs, and learnt about how this type farming can protect the environment, lock carbon away and produce nutritious food. Visitors also got a history tour, including a wander down to our regenerated Minyulo Brook. This area is where the farm name, Noondel, is derived from it means watershed in the Yued language. Before European settlement the area was not so much a creek but rather a waterway that shed out across the land. As we have revegetated the waterway and slowed the creek flow, the land is returning to how it was and the water is again shedding out over the landscape as it used to bringing in huge amounts of birdlife and biodiversity.

13.01.2022 Curious moos checking out the action during the drone shoot the other day. Our animals are moved regularly and are handled with low stress stock handling methods, which means they are quiet and calm around people. Drones on the other hand are something new they are not too sure about yet!

13.01.2022 The lumps you can see in this pic are big tussocks of Gatton Panic, a type of perennial pasture that grows in the summer months (and in a warm winter). At the end of August, as the soil warms we will prepare the next part of the farm to be sown with Gatton Panic and other species of perennial pastures. Their long roots will eventually drill deep into the soil, seeking out moisture and nutrients, holding the soil together in the long summer months and sucking carbon from the air and depositing it at depth.

11.01.2022 Lots of big smiles around Dandaragan - finally a decent drop of rain with gauges filling up by more than an inch in the last couple of days. So great to see mud and overflowing creeks again. For us, plentiful rain means growing more pasture to keep our cattle well fed and happy throughout the year.

06.01.2022 Joan and David Cook, founders of Dandaragan Organic Beef. Nearly 20 years ago these two decided to make a big change and convert their entire 7300 acre farm to certified organic. This was well before organic food was trendy and well before many people even knew what organic farming was. Our Farm Open Day visitors really enjoyed meeting Joan and David and hearing first hand about why and how they became trailblazers in organic and regenerative farming world. Though at the time they did not know they were becoming leaders in this field, they just wanted to grow healthy nutritious food.

03.01.2022 It is a while since we have had a 40 degree day, but the hot weather is now upon us. The best time of the day is early in the morning to get jobs done before it gets too hot. Our animals get checked or moved daily to make sure that they have adequate water, food and shade to get through the heat of the day.

02.01.2022 One of the exciting parts of our Farm Open Day is seeing Chef Stuart Laws loves cooking Dandaragan Organic Beef over coals in the big farm cauldron, and Saturday was the perfect weather for it too - sunny with temperature in the low 20s and a gentle breeze. Combined with a glass of Bindoon Estate wine (which is made from grapes grown in a certified organic vineyard) it was a stunning paddock picnic day.

01.01.2022 Cows are very inquisitive creatures. This mob of little weaners are super nosy about any activity happening in their vicinity. Because our animals are always treated with care and respect, they are quite happy to get up close and personal with weird two legged animals that happen to be hanging out in their paddock.
