20.01.2022 When the Greeks founded Naples, they adopted a dish made by the natives, made up by barley-flour pasta and water dried to the sun, which they macaria. We also find references to pasta dishes in the ancient Rome, which date back to the III century before Christ. In fact, the Roman Cicero himself speaks about his passion for the "Laganum", the laganas, which are strips of long pasta (wheat-flour pasta shaped as wide and flat sheets). During that time, the Romans develope...d instruments, tools, procedures (machines) to manufacture the pasta for lasagna. Ever since, cereals have exhibited great facilities for both its transportation as well as its storage. It was the Roman expansion and dominion which fostered the harvest of cereals in the whole Mediterranean basin. In 1740, in the city of Venice, Paolo Adami, was granted the license to open the first pasta factory. A hundred years thereafter, in Amalfi, water mills and stone grinders started to be used, where the semolina was separated from the bran. The machines brought along with them the development of the market, skills and exports throught the ocean. For 1914, the artificial drying process allowed the pasta to be available in all the regions of Italy. The great development of the Italian pasta at the turn of the century was tightly linked to the export, which reached a record level of 70,000 tons, many of which were sent to the United States of America. Later on, importing countries started to produce machines to manufacture their own pasta products, and these managed to conquer the world. Over these centuries regional variations as well as preparation techniques have created various types of these sausages. Each type of Salami (Salame) is made differ...ent then any other, that is why it is hard to describe a general production method. However they are all part of the same family of pork sausages and go through the same stages. Salami is differentiated by the fineness of the ground meat and each variety has a different type of meat consistency as well as a different spice mix. However all salami is made with pork, which has been blended with a particular ratio of high quality pork fat. Favorite spices and flavorings include salt, pepper, garlic, wine, mace, fennel and sometimes cinnamon. Some preservatives are used, but only in amounts allowed by food purity laws and some salami is also colored. Once these meat and spice combinations are blended and packed in natural or synthetic (for cooked salami) casings, the sausage is aged in dark cool cellars. See more
