24.01.2022 Need a chocolate hit? Heres a simple chocolate brownie recipe that will do the trick, using lovely Forge Creek Free Range eggs. It pays to let it cool in the tin but nobody has any self control in our house The recipe is in the photos. To make things easier I melted the chocolate and butter in the microwave (used 30% power and stirred every min or so until it all melted together). Also added a pinch of salt to the flour.... I suggest a long walk with the dog afterwards Note - this is quite a sweet brownie, next time I will use 2 cups castor sugar instead of the stated 2 1/2 cups. See more

14.01.2022 BEEF OR PORK OR CHICKEN ASIAN MEATBALLS WITH BROCCOLINI AND RICE Heres a ripper of a one-pan dish - so easy and packed with flavour! The family LOVED it Everything baked on the one tray in a super hot oven, just a little prep work and hardly any washing up. Veggies become a little charred by the end of cooking.... I doubled the recipe because I have a houseful of Covid refugees at the moment, eating me out of house and home I used beef mince and mixed up my veggies (great for using up scraps in the crisper). 12.01.2022 IMPORTANT CUSTOMER MESSAGE Last night we discovered a post circulating on social media regarding a false covid accusation concerning our business. This is misinformation and untrue. It has since been reported and removed but unfortunately it has been reposted and spread. This is the correct information.... Everyone at David Luckes Fresh Food Market has been requested by Agriculture Victoria and DHHS to have a covid test as part of a statewide screening test of certain areas of the meat industry. This is because we fall under the category of a meat processing licence in the state of Victoria. It is a blanket testing program for every business who holds these licenses, wherever in Victoria your business is located. It is a safety precaution and has nothing to do with the individual health of any of our staff members. No staff members at this time have any covid symptoms but everyone is still required to have the test. After staff members have been tested, they are permitted to return to work as soon as possible, as stated in the email we received which you can read below. Of course, if a staff member did have symptoms they would be required to self isolate. We take all precautionary measures very seriously, including the temperature checking of our staff at the start of every shift and the sanitizing of our store and surrounds three times a day, seven days a weeks. We feel this is extremely unfair of this person to spread this misinformation without bothering to find out the real facts. As a community minded business, we are horrified, our staff are extremely upset and our customers are justifiably concerned. Thank you to the people who informed us of this incident. 11.01.2022 My mum Jan, she’s a great cook and she has been serving up the retro classic ‘Prawn Cocktail’ since the sixties! And this Christmas is no different They are so easy to prepare the day before and assemble before serving, and a little goes a long way. We now add a little diced avocado to the mix (weren’t a lot of avocados around in the 60’s in little old Yarram town). If you’d like to give it a go, here’s what you do.... Using some top quality Spencer Gulf (SA) prawns, peel and dice, whip up your cocktail sauce - check out my ‘oh so easy’ recipe in photos - and store both in fridge overnight. On the day, slice some iceberg lettuce and place in individual dishes, top with diced avocado and prawn pieces and pour over some cocktail sauce. Very easy and delicious with some Banksia Fine Foods vanilla jam and whipped Gippsland Jersey pure cream I didnt have a 4.5cm scone cutter and used a 6cm instead. Recipe can be found in the photos

04.01.2022 A little Covid baking using some Picnic Point Granny Smith apples. Have to admit I havent made a apple pie from scratch for quite a few years, pastry skills a bit rusty! The result was a little cracked and a tad overcooked on one side but it tasted mighty fine - so well just call it rustic This is a recipe I used to use, the pastry is easy and you dont have to rest it, so cook your apples first, maybe a couple of extra apples too. I added a couple of strips of lemo...n rind when cooking the apples (remove when cooled). Hubby likes cinnamon so next time Ill put some in with the apples. See more
03.01.2022 How fancy is this lovely entree or supper - and I used leftovers With lovely fresh Bass Strait scallops now in season, I got a little creative with some leftover cauliflower and cheese sauce and our Luckes Smokehouse streaky bacon - and oh Lord, it was tasty For a moment there, Dave and I actually thought we were dining out Heres the drill. Put your plates in the oven to warm.... Blitz the cauliflower and cheese with a stick blender (would remove any dark baked bits beforehand) and seasoned it generously with salt and ground white pepper. Dice the bacon finely and gently cook until the fat renders. Dont overcook or they become too hard. Remove and place on paper towel. Turn up the heat and quickly pan fry the scallops on both sides in the bacon fat and remove onto warm plate. DO NOT OVERCOOK, or they turn tough and chewy! A little raw in the middle is good because they keep cooking in their own heat. Heat the cauliflower pure in the microwave, if its a little thick you can thin it with a dash of cream. Check seasoning and place across your warm plates. Top with the scallops (and any juices), and sprinkle with the bacon crumbs, some finely chopped fresh chives and a touch of lemon juice. And dream of fine dining. See more
