25.01.2022 A day of goodbyes today. Ive met some great people in emerald in the last 6 months (or is it more). This is the hardest part about us finishing up and Im sad that it had to happen. If you want to do something about climate change, please support regenerative farmers! Im in Emerad today until 12.

25.01.2022 Liver - some people love it, some loathe it and some want to like it because they know its good for you! Im kind of in the last category. But today I really enjoyed it. My theory has always been that if you need some nutrient, then the food with that nutrient will taste good. I had a Yeppoon customer last week that was told to eat some liver and this is how Id described to her to cook it. More info on the photos.

17.01.2022 Special today only! Spend $40 with me at the Kern Arcade Car Park Markets and get a free pack of pork mince. This is my favourite way of cooking with it. I also have bone broth for Sale too! Asian Style Meatballs (with or without noodles its yum!) Meatballs... 1kg Dawson Valley Free Range Pork Mince 1 clove garlic, crushed 1/2 teaspoon Chinese 5 spice powder Stock 1 litre of Chicken or Pork stock (or increase to 1.5L to give left over soup for lunch) A tablespoon each of fish sauce, soy sauce and rice wine 1 onion, sliced 1-2 carrots, chopped 1 stick of celery, chopped 1 clove garlic, chopped 1 tablespoon ginger, grated 1 tablespoon fresh turmeric, grated (optional) 1 chilli, chopped (more if you like it hotter) Vegetables about 2-3 cups or whatever you think you should have Noodles To serve: chopped coriander and extra chilli Method Mix meatballs and set aside. Put stock and liquid, onion, carrot, celery, ginger, turmeric, chilli and garlic into a large pot and bring to boil. Using wet hands to form small meatballs, place carefully into boiling stock. 17.01.2022 Who likes pork butterfly steaks? I usually prefer collar but thought Id have butterfly tonight and they were delicious! I couldnt decide between pork sausages or the butterfly steaks So I did both. I cut mine into loin steaks so that we could have a steak and a sausage for dinner tonight. Ill have plenty of both this weekend.

16.01.2022 I love the morning after a storm! Only 12.5mm but settles the dust and puts a spring in the grass and humans!

14.01.2022 Who makes their own sausages? Maybe you should try. Or get a group together and ask a butcher to make you some. Theyll need at least 10kgs ordered I would think. At least this way you know youll get what you want. Ask for grass fed mince only and no fillers. I am happy to pass on the recipe for the Dawson valley Freerange paleo sausages if you can find a butcher to do it for you. My sister used to do that years ago so its not too unusual.

I will be moving the freezer out early June, so please help me out and go and buy some meat. 04.01.2022 Lots of meat in the freezer at That Wholefood Place. So if you didnt get to the markets, you should be able to pick up something you like there. Pork and beef roasts, steak, diced, mince and sausages. Pork chops, fillets, ribs. Ox tail. Goat roast and diced. Some mutton bits. And plenty of bacon and ham.
