For those that like to venture off the beaten track a little when you hit the country, take the Western Highway, veer off at Myrniong towards Greendale and weave your way through Blackwood and the forest into Trentham that way. 20.01.2022 A different view of our brewery site and the old girl, weve had success with some of the concrete coming up and were continuing to work on removing the rubble and ramping to maintain a workable space moving forward with our team. The ramp on the left of this image is the most flexible concrete plank youve ever seen... its precarious to say the least! - as was a lot of the original building. The softness of these walls and surfaces, (coupled with extreme moisture damage...) allowed it to bow and buldge in the way it did, both on the north wall and the facade. There has been so much moisture held within these bricks and the mortar and was probably a contributing reason it stood for as long as it did, with a moulded flexibility. Not so suitable for todays building standards, but interesting all the same! Limestone mortar and soddy type bricks (the muffins as we refer to them in our stories) wont really cut it in the new build, but a bit of that might actually help whats left of the old to keep those bricks together being their natural form of construction. Who can picture beers in afternoon sun here?! 15.01.2022 If these walls could talk... This here is the hotel component of our brewery building, in its original, and current form. There are six rooms that would have housed a wash basin at best and a comfortable bed, maybe a modest armoire. This is in the good building - and was built ancillary to the pub. Were not sure how much later this section was built, but it was prior to 1875. The afternoon light is captured beautifully here by photographer @danny_wootton - you can almos...t here the voices of weary travellers, their heels clicking on the floorboards, checking in for the night, and the hum of a local bar below filtering in the sun, calling them downstairs for a cold one. The ground is firm and please, oh please let Winter be done with Daylesford - we cant wait for the next stage of developments

12.01.2022 A back view of what was once the Golden Fleece Hotel (minus the lean-tos) on our brewery site - this was originally a pub built somewhere between as early as 1854 and the mid 1860s with the addition of the connecting building on the left existing before 1875. Based on the brickwork weve discovered through the dismantlement it was originally not so large, possibly with a wide carriageway and the rear entry appears to have been added later which likely accommodated for acce...ss to the stables that existed for traveller parking! The current records we have of the earliest publican are a Mr. James Horsnell, who ran this the Golden Fleece for a good 15 years. More on him later, but this Jimmy sounded like a great man. 04.01.2022 Heres to acknowledging all the brave and hardworking fireys out there - to emergency service workers - volunteers - to those who are just damn good people, working tirelessly through Australias bushfire disaster to protect people, places and wildlife. Thank you. Back in the day in Daylesford, there was a pub named after you! ... Our brewery building as seen here, was formally the Fire Brigade Hotel in the early 20th Century (until 1937 when it was de licenced) and was no doubt a bustling drinking hole and name-sake to this great service of firefighting that our community is protected by. The old fire brigade and engine house was right across the road, so if there ever was a time of trouble, we were in luck. And there was - - but many years earlier. In the rear of the hotel, about 1.30pm, March 15th of 1899. It was a Wednesday. The flames had gotten such a hold before the alarms were raised that a stable, a large buggy house and two bedrooms were destroyed. Damage was also done to the kitchen, and sadly, a Mr. George Clarkson lost his horse in the firey ordeal. By the great exertions of the fire brigade and a power stream of water, the hotel was saved and the fire confined to the buildings mentioned.
