17.01.2022 Brownies Featuring chocolate powder of choice 115g salted butter 250g coarsely chopped chocolate or choc chips 3/4 cup caster sugar... 1/4 cup packed light brown sugar 3 large eggs 1 teaspoon vanilla extract 3/4 cup plain flour pinch salt 1 cup semi-sweet chocolate chips (optional) 2 tablespoons chocolate powder MILK CHOCOLATE FROSTING (OPTIONAL) 1 and 3/4 cups icing sugar 115g unsalted butter, softened to room temperature 2 Tablespoons cream 1 teaspoon vanilla extract salt, to taste 1 tablespoon chocolate powder Directions: Melt the butter and chocolate in a large saucepan on medium heat, stirring constantly. Or melt in a medium microwave safe bowl in 20 second increments, stirring after each, in the microwave. Remove from the heat, and allow to slightly cool for 10 minutes. Heat oven to 170c degrees. Line the bottom and sides of a 9x9 inch square baking pan with baking paper, leaving an overhang on all sides. Set aside. Whisk the caster and brown sugars into the cooled chocolate/butter mixture. Add the eggs, one at a time, whisking until smooth after each addition. Whisk in the vanilla. Gently fold in the flour, choc powder, and salt, and then fold in the chocolate chips. Pour batter into the prepared baking pan and bake for 33-35 minutes or until the brownies begin to pull away from the edges of the pan. A toothpick inserted in the centre should come out with only a few moist crumbs when the brownies are done. All ovens are different, so keep an eye on them after 25 minutes and use the toothpick test to see when yours are finished. Allow the brownies to cool completely in the pan set on a wire rack. Once cooled, lift the foil out of the pan using the overhang on the sides and cut into squares. See more

09.01.2022 Hot dip (ie cobb loaf variety) Featuring Spice blend of choice. 1-2 tablespoons required 1 tub cream cheese 1 cup grated mozzarella 1 cup grated tasty cheese... 1 medium onion 2 rashers bacon 300ml cream. Bread/veggie sticks for dipping Optional Cobb loaf bread to put mix in Method Dice bacon and finely chop onion. Using a non-stick pan if available, fry bacon and add onion. Fry until onion is soft. Reduce heat. Add spice blend. Add cream and cheeses. Stir until melted and combined. Can be served in a bowl with bread and veggie sticks or Warm a cobb loaf in the oven while the filling is cooking. Cut the top off the bread loaf and carefully hollow out reserving the bread for dipping alter. Be sure to leave a border all around and on the bottom. Spoon the hot filling into the hollow cob. Place the ‘lid’ on and return to the oven for 10 mins or until the filling is hot. Serve with the removed bread pieces and veggie sticks or crackers. See more
