22.01.2022 Little bits of chocolatey deliciousness . I used the recipe from Cowboy Truffle Tart for the milk chocolate layer (with Butterscotch schnapps). I was trialling a new sweet shortcrust pastry - it's pretty yum. I used a muffin tin to make the pastry cups.

20.01.2022 I was making more sourdough baguette crackers to go into the goodie bags for my online gluten free baking classes. As I had enough sourdough left over to make another loaf I decided to try and make a sourdough Babka (I converted the recipe from The Perfect Loaf) - it was pretty good for my first attempt (but does need a few changes). 18.01.2022 Unfortunately the snow didn't settle :( . Instead of playing in the snow I've done a bit of typing & baking. The recipe for White Chocolate Truffle & Lemon Butter tarts is now on the website (link is in the comments section). and I made two pizza scroll loaves for lunch. One contained passata, ham & mozarella (photos) & the other was roasted pumpkin, meredith dairy marinated goat cheese (+oil) and bacon. My family loved them :). They were super yummy & I will be putting the r...ecipe for them on the website. But if you can't wait & want to try it for yourself a shortened version follows..... Ingredients 350 g Bakers' Magic gf flour 50 g Maize starch (cornflour from corn) 50 g Potato starch (not potato flour) 4 g Psyllium husk 1.5 tsp Salt 3 tsp Sugar 2 tsp Yeast 70 g Oil 1 Egg 540 g Warm water Pre-incubate the yeast with the sugar & warm water. Mix the dough & let it sit for 5 mins to thicken a bit. Line two baking trays with baking paper. Spray with a bit of oil. Divide the dough & put on the baking paper. Smooth both dough into rectangles.(I put a bit of oil on my hands). Top with your fav toppings. Prove for about 20 mins somewhere warm. Roll up the dough (use the baking paper to move the soft dough). Use oiled scissors to cut the dough (check the link to Epi bread in the comments section) Prove the cut dough for another 15 mins. Bake at 190 C for approximately 30 mins. Allow to cool for ~ 5 mins before eating. Simply enjoy!
16.01.2022 Do you ever start to make something & then realise you don't have enough ingredients? and you end up with a new bikkie? :) (It's dairy free & egg free). BTW - if you haven't entered my Bakers' Magic gluten free flour /online baking class give away competition you still have time (closes Friday). I've pinned the post to the top of this Facebook page. I was making some gluten free palmiers & instead of putting cinnamon & brown sugar over the puff pastry I decided to put on a... mix of pecan meal & maple syrup. Yep - not enough pecans. Yeasted puff pastry was waiting to be used so I had to mix together pecan meal & almond meal. The result was absolutely delicious (& quickly snaffled by my family). Anyway today I thought I'd better test the mix with straight pecan meal. The result - tasty little pecan bikkies (3 ingredients). If you are interested the bikkies were made with: 160 g Pecan meal 160 g Maple syrup 40 g Bakers' Magic gluten free flour Mix ingredients together. Put teaspoons of the mix on a lined baking tray. Flatten the mix with the bake of the teaspoon. Bake at 180 C for ~15 mins. Take out of the oven. Turn oven down to 100 C. Put tray back in & bake for another ~30 mins. They should be crunchy when they are cool. Stay safe :) Cheers, Libby

13.01.2022 I love this - thanks for sharing Skye :). "Gluten-free & mostly dairy free (apart from some of the decorations) version of the Australian Women’s Weekly vegetable patch cake. (Our fam only GF but a guest is DF). Chocolate sponge cake base, and we used crushed Ozzie-O’s to replace the Milo ‘soil’. Love that I always know I can find tasty allergy-free recipes on your site!"

09.01.2022 We've been making exam food - brioche style crackers brushed with garlic infused oil (sooo yummy) and a choc caramel slice (using Afghan biscuits as the base for the slice). My daughter has 2 more year 12 exams to go .

05.01.2022 Dinner tonight - caramelised onion, roasted sweet potato, spinach and bacon quiche with Meredith Dairy marinated goat cheese. I usually use 4 eggs to 300 ml cream. The gluten free pastry is the savoury shortcrust recipe from the website - link is in the comments section.
