01.01.2022 Just The Contender, Sweet Meat and hot smoke. Life's simple pleasures. Brine your wings folks, it's easy - 2 tablespoons sea salt, 3 tables brown sugar and 1.5 ltrs tap water for a few hours to 2 days. Add any aromatics you like.

01.01.2022 Strange start of week feed. Left over pork belly from Meatland at North Lakes getting smoke to become burnt ends. Horrible cheap pork leg I grabbed to mince, but wife wanted roast pork so I'll see if I can polish that turd. Offcuts in Pig Candy and a prototype umami beast for testing. How's that smoke from Ministry of Smoke plum. Beef cheeks in the fridge for the next run.
