18.01.2022 Caprese Risoni Salad How beautiful is this salad to look at?!? Especially because it so perfectly looks like Christmas colours. It helps that it is freaking amazing! Little tiny pieces of pasta (Risoni) with loads of fresh, raw vegetables, itty bitty bites of bocconcini all sauces up with a basil and balsamic reduction makes for a flavour hit. 17.01.2022 Salted Caramel Fudge Woah! This baby is delicious. Sweet but amazing! I’ve sort of fallen in love with making fudge because it looks so good when it’s all done. This is just a normal caramel fudge with salt flakes on top so depending on your taste you can have a little or a lot. Salt just works so well with caramel so I like it with a reasonable spread on top. Do you have a favourite fudge flavour? The caramel made from scratch is just perfection and that beautiful shiny chocolate topping makes me happy! 08.01.2022 Birdseed Slice I made this one again yesterday to give my mum some to take away with her. Because it is loaded with nuts and seeds I don’t even feel guilty having this snack! I’ve kept a bit for me to have in the fridge to keep me going through all the baking I’ve been doing the last few days. This is just sweet enough to get you over a craving but also loaded with power to keep you going between meals. 05.01.2022 Cacao and Granola Rocky Road Firstly.... how beautiful does this look This is a healthier, vego take on a classic! Traditional rocky road usually has marshmallows which contain gelatine which is a definite no no for me as a vegetarian. Instead, a rich, creamy chocolate base using medjool dates, cacao, coconut oil, vanilla and warm spices mixed through a beautiful granola, apricots, cranberries and Goji berries. Mix that all together, pop it in a slice tray and top with c...oconut, pistachios and freeze dried berries. Not only does it look stunning, it’s also a great lower sugar/junk treat to have!
