21.01.2022 Vegan, Gluten and Nut free cake is an absolute NIGHTMARE! I know you are thinking how can it be truly cake without eggs, dairy, gluten and nuts? Well, up until this order I didn’t think I could crack this mystery either! All thanks to my customer who took the leap of faith with me I managed to pull it off. Cupcakes debrief was ‘under the sea/ocean theme’ for her 1yo’s birthday. She wanted it simple with clean, safe ingredients for her baby (who doesn’t??). Customer added on s...ea animal figurines I provided. Vanilla on Vanilla Cupcakes No eggs No dairy (in sponge and icing) No nuts No gluten No refined sugars No artificial colours 90% certified organic ingredients

15.01.2022 I shall call this ‘The Impossible Cake’. Impossible because it was challenging to find an icing which is whole food, able to hold up well without melting, able to be iced nicely, does not contain many allergens (no eggs, gluten, dairy, dairy substitutes, refined sugar free) and of course, ensuring it still tastes exceptional. I’m extremely thankful for this opportunity. I’ve such an amazing job allowing allergic kids the opportunity to feel ‘normal’ (like their peers) and... able to have their (healthy!) cake and still stay safe. Cake - Strawberry Coconut Kaffir - Low gluten, vegan (no eggs, no dairy), all natural colouring, refined sugar free - Whole food icing using sweet potatoes!!! Cupcake pull apart cake - Strawberry Coconut Kaffir - Gluten free, dairy free, refined sugar free Ps Cake topper decorations were prepared and added on by my lovely customer.

05.01.2022 Wednesday Fun Fact for my dear followers - I’m actually a Doctorate in Biomedical Science! Yea, what am I doing baking cakes now, you ask? passion. During the course of my PhD I met a lot of wonderful, fun people I now call friends. I’m honoured to be able to bake for one of them who endured this arduous journey with me. We went on different paths since our graduation but whenever we catch up it’s just like the good old times. Here’s to our continuing friendship, good heal...th and happiness!
