23.01.2022 Is sourdough baking the latest isolation craze? We think so, and we're not mad about it! It all begins with flour and water, a simple starter mixture which is... fermented over 5-8 days. As the starter grows its own unique community of yeast and bacteria, it needs to be 'fed' water and flour daily. The fermentation process gives the bread its amazing taste and health properties. Sourdough can also be made with different flours so try experimenting with wheat, rye and spelt flour. 22.01.2022 Kale.. received a bunch of it in my latest fruit and vege order. Found an wonderful and super easy recipe. The whole family loved it. 1 -2 tbsp extra virgin olive oil and 2 tsp minced garlic. Heat in pan. Add chopped kale and sauté until soft. Carb free side to any meal. Yum!

21.01.2022 Roast Vegetable Soup and a toastie .. Is there anything better on a cold winters day!! A roaring fire perhaps and a glass of red! Whatever vegetables are left in the veggie shelf.. roast in oven on nonstick baking paper for 20 mins at 180C. Add to vegetable stock on stove top and cook for 20 minutes. Purée. Happy Sunday x

20.01.2022 Lifestyle change vs diet! This week I chatted to many of my patients about not trying to be 100% perfect on their diet. You are doomed for failure or rather the diet is failing you. In fact, dieting means restriction and I know that small changes to your current eating plan are the best way to ensure lifetime change. So if the choc mudcake is beckoning you then have it. Maybe share it with the family?! If you dont have a little occasionally, you will wind up eating a lot too often!

19.01.2022 Thai Beef Salad with Nam Jim dressing This is a great lunch recipe perfect for days when you want something light and tasty. You could even prepare each compone...nt of this dish and store it separately in the fridge ready to throw together for lunch on busy days. Thai Beef Salad with Nam Jim dressing Serves 3-4 Ingredients: 500g beef stir fry strips 200g bag of 4 leaf salad mix 1-2 Lebanese cucumbers 1 carrot 1/2 capsicum Coriander and roasted peanuts for topping Beef marinade: 2 tbs reduced salt soy sauce 1 tsp garlic 1 tsp ginger Add chilli if you prefer Nam Jim dressing: 1 tbs minced garlic 1 tbs minced ginger 2 tbs finely chopped coriander root 1 tbs chopped red chilli 1/4 cup fish sauce Juice of 1 lemon 1 tsp honey Method: 1. Combine beef marinade ingredients and set aside to marinade. 2. In a separate bowl, combine Nam Jim dressing ingredients. Mix well. 3. Prepare the carrot and cucumber by using a potato peeler to create thin slices. Using a sharp knife, thinly slice capsicum as well. 4. In a hot pan, add the marinated beef in two batches and cook right through. 5. Add salad ingredients to a serving bowl, drizzle with Nam Jim dressing and top with pieces of beef. Sprinkle chopped coriander and roasted peanuts on top to serve.

12.01.2022 Desi's Advice on preventing ISO weight gain & Stress Snacking With new routines and new work environments, the one thing we feel we can control during periods ...of uncertainty is the food we eat. Desi Carlos Dietitian was featured on 97.3FM to have a chat about maintaining healthy eating routines and how to stop stress snacking during isolation. It's important to identify when we are emotionally eating due to stress. A great way to counteract stress snacking is by putting reminders in your phone of set times to eat. So have a good breakfast, 3-4 hours later enjoy a snack, then a few hours later, eat lunch, afternoon tea, etc. Try not to eat in your kitchen or at your desk. Enjoy food outside, get vitamin D from the sun and stretch your body. This helps you to control portion sizes, get your body moving so you're not sitting all day and enjoy some sun to boost your mood and immunity! Using a shopping list when doing your groceries can help stop you from picking up unhealthy snacks as you walk through the aisles. Try to base your snacks around eating more fruits and vegetables. Foods which are high in fats, added sugars or salt can be eaten mindfully and in moderation. 11.01.2022 Recipe time! One of my favourite tuna meals (enticing kids with more fish) is my tuna and tomato pasta salsa. Simple! Delicious! Healthy! In 1 tbsp extra virgin olive oil (Olea of Monemvasia) sauté a finely chopped onion and 2 crushed garlic cloves. Add a tin of salt reduced diced tomatoes. Heat through for 2 minutes. Add 8 pitted kalamata olives (optional), 1 tbsp capers, cracked pepper and 1 tsp dried basil or 1 tbsp fresh basil. Add largest tin of chunky tuna in spring water. Simmer on low for 10 minutes. Serve with your favourite pasta or zucchini noodles for a low carb option. Its a winner for the family!

10.01.2022 Tandoori chicken anyone?! A quick and easy healthy meal when you are time poor. 1 tbsp tandoori paste mixed into 1/2 cup yoghurt. Marinate chicken breast or tenderloins for 1 hr at least or overnight. Cook on barbecue or nonstick frypan. Serve with yoghurt, basmati rice. Ive added zucchini and kale tossed in olive oil and garlic. Enjoy x

08.01.2022 Smoked Salmon French Toast - Christmas Breakfast Ideas Serves 4 Ingredients: 3 eggs 2 tbsp low fat milk... 1/2 tsp dried mustard 1 clove of garlic (minced) 2 tsp freshly chopped dill 4 pieces of sourdough 150g smoked salmon Salt, pepper and lemon to season 1/2 cup light cream cheese Method: 1. In a bowl, combine the eggs, milk, dried mustard, garlic and dill. Add salt and pepper to the mixture and combine. 2. Dip the sourdough into the egg mixture, ensuring both sides are covered. Allow excess mixture to drain and place onto a pan on medium heat, using extra virgin olive oil to prevent the bread from sticking. 3. Cook until each side is golden brown. 4. Top each toast with cream cheese, smoked salmon and a squeeze of lemon juice.
