05.01.2022 At Dhiaga, we favour using the natural earth forces like gravity and the lunar cycles. Here is our 2019 Nebbiolo settling before bottling. All the sediment in the photo on the left is compacted to a solid deposit on the right after a few weeks. We then racked (decanted) the clear wine on a full moon as this was when the earth’s gravitational pull is highest. This wine was then bottled without filtration when the moon was in a flower phase as this is when the aromas in the wine are homogenised and captured for you to enjoy. We will wait another 12 months of maturation in bottle before releasing this wine, but it will be worth the wait.
