24.01.2022 Fermented foods. Suddenly everywhere, & with good reason. If you are new to them, or want to know more, look no further! What is fermentation? Fermentation is a centuries-old process of food preservation a way of prolonging the expiry date of dairy products & vegetables before refrigeration was an option. Lots of the foods we consume today are fermented bread, cheese, coffee and chocolate however, not all of these contain the live cultures that are going to diversify yo...ur gut microbiota. For living microbes we have to look to the likes of Jun, Kvass & Sauerkraut, to name a few. In these, the fermentation process starts to break down the food resulting in a nutrient rich end-product that’s easier to digest. So, what are the benefits? Good health starts with good gut health. As gastroenterologist, Will Bulsiewicz, states ‘Gut health IS immune health’. Anything that benefits the gut, fermented foods included, also improves our immune response, supports digestion, & may even aid weight management. Fermented foods can be a super tasty way to get more live cultures into your diet and encourage diversity in your gut bacteria. Lacto-bacteria is already present on the skin of many vegetables like cabbage & spinach. I have a probiotic-rich kitchen that has seen many successful ferments already so I do not need any additional help to get the right bacteria in my ferments. It is already present in the air of my home. Lacto-fe...rmentation is the process by which bacteria break down the sugars in foods & form lactic acid. During lacto-fermentation, lactic acid bacteria break down carbs into lactic acid and carbon dioxide. This creates an acidic, low-oxygen environment that encourages the growth of good bacteria and prevents the growth of other microorganisms. Most commercial fermented foods are pasteurised after fermentation, which kills all live bacteria & allows for a longer storage time. However, these foods don’t provide the health benefits of live bacteria cultures. 11.01.2022 All my fermented products are lacto-fermented with pure local natural raw honey. It has not been heated or treated from the hive to the jar. I use raw honey in fermenting as it features naturally occurring yeast & enzymes. By fermenting honey we naturally increase those benefits. Fermented honey has been the sweetener of choice for thousands of years. It is one of the most delicious, healthy & sustainable sweeteners available. Honey ferments are an excellent food preservative.... They just keep getting tastier as they age. It’s known to have healthful medicinal properties that are anti-bacterial, anti-viral & boost your immune system. The pollen in raw honey is beneficial to those suffering allergies. 09.01.2022 Let food be thy medicine and medicine be thy food, the age old quote by Hippocrates is the ideology of today’s health conscious population. Why take probiotics on an ongoing basis? Many people choose to take probiotics every day, whilst some might just use them periodically or whenever they feel that they need a little support. Whichever way you find works best for you, it is worth remembering that many factors can negatively affect the probiotic colonies in our gut.... So, whilst you might think that once you have established good gut flora that it can then be left to its own devices, in reality our lifestyles are now so challenging for our microbiome that many of us need to nurture it on an ongoing basis. Most people know that antibiotics do not differentiate between the good and bad bacteria in our guts, and therefore negatively impact on our probiotic colonies, but we often do not look at all the different sources of antibiotics in our food chain. Not only are we exposed to antibiotics when we take them ourselves, but we are exposed to low levels all the time if we eat non-organic meat and dairy produce. These have a similarly negative impact on our gut flora. In addition, we are often exposed to chemicals such as chlorine in our drinking water. Chlorine is a strong anti-microbial agent, and whilst it helps to keep undesirable bacteria out of our water supply, it also damages our delicate gut flora. Other factors that deplete our flora include, over-consumption of sugar, contraceptive pills, HRT medication and stress. With all of these things in mind it is easy to see why a daily top-up of probiotics might be a good idea for many people. Like most vitamins and minerals, we do not produce probiotics ourselves. Many people feel that probiotics give them that extra bit of confidence and a little health boost. Due to unfavourable lifestyle factors that compromise our gut flora it may well be better to replenish our probiotic colonies on an ongoing basis, and this is why many people choose to take probiotics every day.
