23.01.2022 COMMON ALLERGEN #4: EGG Egg allergy is one of the most common food allergies in childhood. Most infants (80%) are likely to grow out of their egg allergy within the first years of life, however some may not outgrow it until their teen years and some may not outgrow it at all. Eggs are often used in cooking as binders, thickeners or used to make food shiny or glossy. Therefore, egg is often hidden in many unsuspected foods such as pastries , crumbed foods , creamy salad dr...essings, sauces and mayonnaise, some pastas , and baked meat dishes such as meatloaf or meatballs. Always check the label when catering for an egg allergy and look for hidden names such as albumin, globulin, meringue and ovalbumin.
23.01.2022 This week is Grains & Legumes Nutrition Council Whole Grain Week, a week aimed at inspiring Australians to make the swap to whole grains! Whole grain foods are packed full of nutrition and evidence shows that regular consumption is linked to a reduced risk of heart disease, diabetes, stroke and some cancers! For people with coeliac disease, it can be a little bit more tricky to meet your whole grain requirements due to the exclusion of wheat, rye, barley and oats. So, h...ow can you get enough whole grains on a gluten free diet?! Gluten free doesnt have to mean whole grain free! There are plenty of whole grain foods that are naturally gluten free such as brown rice, quinoa, sorghum, buckwheat and millet! Try to regularly include these grains as part of a healthy balanced diet.
23.01.2022 COMMON ALLERGEN #3: PEANUTS Peanut allergies are increasing in prevalence. Almost 3 in every 100 children have a peanut allergy. However, for some peanut allergies dont appear until later in life. Did you know peanuts arent the same as tree nuts? In fact, peanuts are actually legumes (like chickpeas and lentils)! Therefore, people who are allergic to peanuts are not necessarily allergic to tree nuts. However, around 30% of peanut-allergic individuals will also be allergi...c to tree nuts. #trustthehawk
22.01.2022 COMMON ALLERGEN #7: SHELLFISH Did you know there are two different types of shellfish: crustaceans, like shrimp , crab , or lobster and mollusks, like clams, mussels, oysters, octopus , or squid ... Some people with shellfish allergies are allergic to both types of shellfish, but some are only allergic to one type! However, this can only be determined with a specific allergen test.

21.01.2022 When communicating about dietary requirements, its important that youre providing/collecting enough information so that it can be managed appropriately . Different terms can mean different things for different people and without appropriate clarification it could result in poor management For example, "gluten free" could mean gluten free for coeliac disease where even traces of gluten cant be consumed . Or, "gluten free" could be a personal preference where the person... may only wish to avoid major sources of gluten such as breads and pastas . The management of each will be very different. 19.01.2022 COMMON ALLERGEN #6: SOY Soybeans are a member of the legume family (like beans, lentils, chickpeas and peanuts). Soybeans alone are not a common food in Australian diets but soy is widely used in a range of processed food products. Foods that may contain soy include bread and baked goods , cereals, crumbed meats and fish and deli meats. Soy is also commonly used as a vegetarian protein substitute and is usually the base for vegetarian meats such as vegetarian mince, saus...ages and burgers. #trustthehawk

18.01.2022 Wash your hands - the most important piece of advice weve received to help us stay safe from COVID-19. As a result, the supermarket shelves are bare of hand soap, sanitiser and anything and everything else that could be used to help keep us and everyone around us safe. Having a food allergy is like trying to avoid Coronavirus every single day. Like the virus, traces of food allergens can be transferred by shaking hands or touching door handles and other surfaces . Poor hand hygiene increases the spread of allergens and increases the risk of a life-threatening reaction for people with food allergies. So wash your hands before and after eating to reduce your risk of catching the virus. THEN continue to keep up the habit after the pandemic ends. Do your part to help keep those with food allergies safe too!

16.01.2022 Today marks the start of Coeliac Awareness Week which is aimed to increase the public awareness of the disease and to improve the rates and testing of diagnosis. Did you know over 355,000 have coeliac disease but 80% dont know they have it! Undiagnosed and unmanaged coeliac disease can increase the risk of other serious health consequences such as oesteoporosis, anaemia, certain cancers and infertility. 15.01.2022 COMMON ALLERGEN #5: FISH Unlike other food allergies, which are typically first observed in infants and young children, around 40% of fish allergies first occur in adulthood. Did you know that finned fish (such as salmon and tuna) and shellfish (such as mussels, lobster and crab) arent related, meaning that being allergic to one doesnt necessarily mean you have to avoid both (unless you are allergic to both or if there is a risk of cross contact)! ... #trustthehawk
14.01.2022 Yesterday we held our very first Dietary Hawk event - a PD session focused on dietary requirements in childcare centres. We had directors and cooks from over 20 different childcare centres come to learn about dietary requirement management. Guests learnt about the different types of dietary requirements, the risks to dietary requirement management and substitutions. Then we moved into the kitchen where we used this knowledge to modify a dish to make it suitable for different dietary requirements (while making sure it still looked and tasted the same and making sure it remained nutritionally adequate)! We had a great time and hope those who attended did too!!

11.01.2022 LUNCH BOX HACK #2: DAIRY Milk, cheese, yoghurt and/or alternatives are a rich source of calcium and protein, which are important for helping our kids grow and maintain strong bones and teeth Including some dairy options in childrens lunch boxes each day is important to help them meet their nutrient needs. However, for some kids (e.g. those with lactose intolerance or cows milk allergy), limiting/avoiding cows milk can make it tricky to meet their nutrient needs. Instea...d of cutting out this food group altogether, swap unsuitable options for suitable alternatives (that provide similar nutrients)! Low lactose ideas: Choose hard cheeses such as cheddar, tasty or Colby as these are naturally low in lactose Choose lactose free yoghurts such as Vaalia Kids Lactose Free yoghurt pouches, Liddells Lactose Free yoghurt tubs, or Jalna Lactose Free yoghurt tubs Cows milk free alternatives Choose small cartons of soy milk such as Sanitarium Soy Milk 250ml tetrapacks Choose soy-based yoghurt such as Kingland Soy Yoghurt tubs! 05.01.2022 Evidence shows that the more people eat with others, the more likely they are to feel happy However, for people with dietary requirements eating out with others can cause feelings of fear, stress, anxiety and embarrassment . In fact, Research by Allergy and Anaphylaxis Australia revealed that 70% of their members dont feel confident eating away from their own home. Our goal is for everyone to be able to eat with confidence. ... #trustthehawk
04.01.2022 The oat controversy... can people with coeliac disease eat oats? The gluten protein found in oats differs slightly to the gluten found in wheat, rye and barley and evidence shows that uncontaminated oats (oats which have not been grown of processed with other gluten-containing grains) are well tolerated by most people with CD. HOWEVER, 1 in 5 people with CD will react to oats and their consumption will cause damage to the bowel (which may occur with or without any symptoms)... Theres no simple test to decipher who can and who cant tolerate oats and so the Australian food standard says NO to oat consumption on a gluten free diet (unlike the UK and US where uncontaminated oats can be classified as gluten free). Currently, the only way to find out whether someone with CD can consume oats is via a gastroscopy and small bowel biopsy before and after 3 months of regular oat consumption.
02.01.2022 COMMON ALLERGEN #2: COWS MILK In Australia and New Zealand, cows milk allergy affects around 1 in 50 babies. However, around 80% of these children will outgrow their cows milk allergy by the age of 3 to 5 years. Most people who are allergic to cows milk will also be allergic to other animal milks (e.g. goat and sheep milk ) because these contain similar proteins to cows milk. Therefore, these milks should also be avoided by people with cows milk allergy.... #trustthehawk
02.01.2022 LUNCH BOX HACK #1: WHOLE GRAINS Whole grains and cereals are an important source of carbohydrates needed to give kids the energy they need to fuel their body and brain throughout the school day. Theyre also an important source of dietary fibre, vitamins and minerals. Kids with coeliac disease must exclude gluten-containing grains from their diet, however it doesnt mean they need to cut out this food group completely! In fact, they shouldnt as it means they be missing ou...t on important nutrients. So, instead of just removing grains from kids lunch boxes, replace them with a gluten free substitute. Need ideas? Pasta bake made with Pulse Pasta (which is made from legumes!) Brown rice sushi rolls Quinoa and vegetable patties Gluten free pizza bases topped with ham, cheese and your kids favourite veg Gluten free whole grain crackers with cheese or dips (such as hummus or tzatziki)
