03.01.2022 Quick, Easy + Healthy Dinner Idea - 15 minute Thai Beef Salad with Rice Noodles Serves 4 Number of serves per person: 3.5 Vegetables ... 3/4 Grain 1 Protein Ingredients 250g rice vermicelli noodles 2 x 315g Woolworths Thai style salad kits 350g sliced rare roast beef (from deli section) 250g punnet cherry tomatoes, halved 1 large Lebanese cucumber, halved lengthways, thinly sliced 1 bunch coriander, leaves picked Directions: 1. Place noodles in a large bowl and cover with boiling water. Stand for 5 minutes or until noodles are soft. Drain well. (if preferred, cut noodles into smaller pieces with scissors). 2. Place salad from kits in noodle bowl. Shred beef and add to salad with tomato, cucumber and 3/4 of coriander. Add dressing from salad kit and toss until combined.
