22.01.2022 Serves 6:- 1 protein, 1 fat, 3 vegetables & 1 dairy protein Ingredients: 800g fresh pumpkin, peeled & cut into thin wedges 500g chicken mince 2 teaspoons olive oil 1 medium onion, finely chopped 1 clove garlic, crushed 1 cup grated zucchini... 800g tin chopped tomatoes with basil 1 teaspoon oregano 200g reduced fat ricotta cheese 1 egg Pinch nutmeg Olive oil spray 100g reduced fat mozzarella cheese, grated Herbamare* Method: Preheat oven to 200C. Line 2 baking trays with baking paper and place pumpkin slices on the trays and spray with olive oil. Bake for 30 minutes or until golden and tender. Turn halfway through cooking. Spray a non-stick fry pan with olive oil, add chicken mince and cook for 5 minutes or until tender. Season with herbamare and pepper. Remove the mince from the pan and set aside. Heat the olive oil in the same pan and add the onion and garlic, cook for a couple of minutes and then add the grated zucchini. Cover pan and lower heat, cook til zucchini is tender. Add the tinned tomatoes and oregano. Add the chicken and simmer for 10 minutes or so to reduce some liquid. Place the ricotta cheese and egg in a food processor and blend until smooth. Add pinch of nutmeg. Spray a 16cm x 26cm baking dish with oil and line the base and sides with the roasted pumpkin. Spread the ricotta cheese mix over the pumpkin. Pour the tomato, chicken and zucchini mixture over the ricotta cheese mixture and sprinkle with the grated mozzarella. Bake in a preheated oven for 20-30 minutes. Remove from the oven and allow to stand for 5 minutes before serving. *Herbamare is a herb seasoning salt, made with organic herbs and vegetables
