Use the colors of the cheeses and accompaniments to put Valentine’s twist on a cheese platter anyone will love! ... So here’s how to create your version of the ultimate Valentine Cheese Platter. 1. You just need 2-3 cheeses, try different flavours and textures for better variety. 2. 2-3 different crackers or bread, quality is important here. 3. Selection of fresh or dried fruit, berries, nuts, or other snacks from the pantry. Play with colours and be generous, you can't really overdo it. 4. Add a fun dip or spread. 5. Add veggies, olives, or pickles. 6. Put it all together by starting from the biggest pieces (cheese) and work your way to the small gap fillers (nuts). 7. Bonus: Add fresh herbs, for garnish! 09.01.2022 Celebrate your weekend with a good view and good food

08.01.2022 Enjoy two of the best things in life- pizza and cheese! How mouth-watering is this "greens pizza" topped with slices of our chevre? All vegan of course! Ingredients:... ~4 cups plain, wholemeal or white spelt flour, plus extra for dusting 1 cup warm water cup olive oil 4 teaspoons instant dried yeast (does not need to be ‘activated’ before using it in the recipe) 1 teaspoon any good quality salt 1 teaspoon sugar Methods: 1. 2 hours beforehand: Add all the pizza base ingredients to a large bowl or stand mixer. Mix until combined. Knead for another 5 minutes until the dough is stretchy and soft. Add a little more flour if the dough is too sticky or more water if the dough is dry. Cover the dough and set aside in a warm spot. 2. When the dough has doubled in size, preheat the oven to 200C. 3. Divide the dough into 2-4 pieces. Place each piece of dough on a lined or floured baking tray or pizza stone and flatten into a large circular shape. Cover and rest the dough in a warm spot for 30 minutes. 4. Spread the tomato paste on the pizzas, leaving a 2cm gap from the edge for a crust. 5.Arrange the capsicum and cherry tomatoes on each pizza. Crumble of the chèvre log on the pizzas. 6.Bake the pizzas in the oven for 20 minutes or until they are golden brown and the vegetables have softened. 7. Scatter rocket or salad greens on the cooked pizzas. Cut up the remaining chèvre and scatter on the pizzas. 8.Drizzle the pizzas with caramelised balsamic vinegar. Season with olive oil, salt, and pepper to taste. And viola, amazingly delicious! See more

We've spent the last 6 months looking for the perfect production space as we have outgrown our current setup and after inspecting pretty much every kitchen available in the whole NSW and south QLD, we have FINALLY found the perfect one for us! ...and it happens to be in Byron Bay! A place that is very special to us as we dreamed about making cheese and living in the area even before Dilectio started (talk about the power of manifestation! ) As we are se...ttling in and reorganizing couple of things we ask you to be patient with us as this is the biggest move (business & life) we both have done and as much as we are trying to keep everything seamless for you there might be some hiccups and delays in response from our side. We have also temporarily paused our Online Shop while we set everything up for you again. Massive thanks for your understanding and patience! Sydney, you will be missed greatly!

01.01.2022 We love to find ways to add vegan cheese to every meal, because why not? Here’s an all-vegan breakfast idea for you this happy Tuesday Presenting our Herbed Camembert Pancake:... Makes: 4 pancakes Ingredients: Pancakes 1 cup plain flour 1 cup baby spinach, loosely packed cup mix of fresh basil and coriander, or herbs of choice 1 cup vegan milk, such as soy, almond or coconut 3 tablespoons Dilectio Camembert (about 1/8 of the whole wheel) 1 tablespoon baking powder 1 tablespoon apple cider vinegar, or any other vinegar teaspoon salt Olive oil, as needed Toppings Slices of Dilectio Camembert Wilted spinach Cherry tomatoes Natural coconut yoghurt Method: 1. Preheat a non-stick frypan to medium-high heat. 2. To make the pancakes, add all the ingredients except the olive oil to a blender. Blend until the batter is as smooth as possible. 3. Drizzle some oil on the frypan. Pour about cup of the pancake batter to form a circle. Cook the pancake for 5 minutes or until bubbles have emerged on the surface and underneath is slightly golden. Flip the pancake and cook on the other side for about 3 minutes or until the pancake has become puffy. Remove the pancake and repeat for the rest of the batter. 4. Serve the pancakes warm with camembert, wilted spinach, cherry tomatoes, and yoghurt. Don’t forget to tag us for your own version of Herbed Camembert Pancake! See more
