21.01.2022 I’ve been working in the kitchen environment for a while. I love cooking and food in general. Smash’s nachos are definitely one of the best I have tried in my life so far. Well balanced, not to heavy and definitely honest in price. But overall you can taste the passion she puts in her cooking to satisfy people. 16.01.2022 Heya Guys. Sorry I disappeared on here for a while. Everything got so super busy, then the anxiety of not posting has been making it rather hard to make a post and share it. At the start of the month I Finished my business course, somehow that included my 112 page Business plan. I had not 1 but 2 performances in Nhill over 2 weeks. Over that time I hit my first kangaroo in 3 years of being in Australia, rather scary experience.... When I got back from one of them I decided I may as-well try to get a loan. I applied at the bank, peer to peer, and finally a non-profit group who offer low interest loans. For the first time in my life it appears that I may fit in all the boxes. This group helps women and children in bad situations and is helping to get work equality for women. They didn’t like how impersonal the NEIS Business plan was (gotta day I agree) so I wrote a new 30 page business plan and handed it into her last Monday. Since then it’s been a bit of a struggle, i’ve been so incredibly busy for the last 2 months. Having the workload slow right down while I’m waiting on funding, my brain has just been non-stop stressing. Have I done everything that I need to do, is it all enough for me to receive this help, is this really happening? I should hear back from the group either with good news or hopefully at least a timeline of what to expect for the process this week. If it’s bad news or is going to take longer to find out then it will be time to give myself a kick up the arse, and start working on plan C. 15.01.2022 Last year I was staying at a hostel and something strange happened. ~ 2 days in a row bush turkeys literally broke into my tent and shat over everything. ~ Worse still it was 40 degrees so it smelled pretty bad. ... ~ During these 2 days I was forced to look around and see what was happening in my community. ~ It wasn’t good. ~ People were having showers and their towels and clothes would disappear. ~ food was disappearing out of boxes, bags and even a few entire boxes went missing. ~ I was seeing people, who I know are good people start following suit. ~ I couldn’t live there like this and no one should have to. ~ I decided DirtbagNachos was in order. ~ I managed to feed over 50 people in the campground. ~ I told them what I had seen ~ And I told them it’s up to us to change this. ~ Hungry people do bad things. Most people don’t want to be bad. ~ We had a bunch of communal meals over the next month and the improvement in the community was incredible. ~ People were all talking and interacting with each other more, we knew who our neighbours were. We didn’t feel so alone. ~ I love food, I use it to encourage connection. ~ DirtbagNachos has been my go to communal meal for 3 years now. ~ It’s always boosted moral in the community, encourages connection and gives people a nutritional meal. ~ ~ ~ I have just over 3 weeks to reach my goal on kickstarter. In that time I will be finishing my time in class with the Neis program, with a complete business and financial plan. I want to have the nacho cart built and ready for business within 8 weeks. 14.01.2022 I have 12+ years in the food industry. KFC, subway, bars, restaurants, Cafes, catering. ~ My favourite part was Interacting with customer and making their day, because seeing them happy would make my day. ~ My least favourite part was when I was expected to do something I morally was not comfortable with.... ~ I’m so excited to be my own boss so I can give people the best customer service possible. No cutting corners, serving sub par food or lack of organisation. ~ I’m not saying I’m going to be perfect off the bat. I am however saying that I will be trying to have everything running to the best of my ability. ~ Its super important to me, that I buy fresh local food everyday to ensure the best quality and smallest footprint possible. ~ I am currently using pine boats to serve. My goal is to buy palm leaf plates when I’m up and running. They cost a lot more but they so damn cool and compostable. ~ I have 3 weeks left for my kickstarter campaign. Super nerve racking. I am Hoping to find some way in Adelaide to give out samples and get more backers. 05.01.2022 Here’s my beautiful handmade practice poi. When I was a kid in school I went to a marae (Maori meeting house). We made our own poi and learnt some movements(not that I remember anything). When I was asked to do workshops and teach people, I was hesitant. After relearning that poi originates from NZ I realised I had a chance to share something from back home.... Performance poi and Maori poi do have a lot of differences in the way they are used. I still wanted to create something that incorporated both the poi I made as a kid and the poi I had since learnt to use. This is what I came up with. When I made them as a kid we used old magazines and plastic bags. So I decided to reuse all the funky materials from old clothes, sheets and scarves. I Attached it to a long string to allow for the movements of the modern style of poi. 04.01.2022 Heya I made the decision to start my own business in December last year. Since then I have been desperately telling myself I will be set up in 6 weeks, then something happens and I tell myself another 6 week. Well i'm finally happy to say I actually see a light growing at the end of the tunnel. In just under 2 weeks I will be able to order what I need to get started. For now I'm just trying to make sure I am as prepared as possible for the day DirtbagGypsy can finally open. ...
