03.01.2022 The fellows at White Possum have been big fans (us too!) of Amaretto and its marzipan flavour since as far back as we/they can remember. But it was a shame not to be able to buy a locally made one, so they did! And the produced the first Australian-made Amaretto! This is a stripped down version of the classic Italian Amaretto, but with an Australian twist. To make it, they smash apart Australian grown bitter almonds (a by-product of the apricot industry), cook and infuse them... in spirit for weeks. This is where we get that big bold marzipan flavour that we love so much. Then they add a pinch of wild Strawberry Gum leaves, harvested from outback NSW, which adds an extra floral boost. YUM! A spiced rum blend of Dominican Republic & Venezuela, slowly infused with black pepper, ginger, liquorice, vanilla & nutmeg. Balanced on the nose between sweetness and savoury spice with notes of nutmeg, vanilla, cinnamon and spicy notes of ginger, pepper and citruses.... Again balanced on the palate making way for the citrus and Ras el hanout spice mix with cloves. building to a woody warming notes of liquorice, tonka bean & Vanila. Finishing on that delicious sweet and saltyness. @compagniedesindes ~ Dos Maderas 5+3 Double Aged ~ Maturing the Caribbean rum begins in Barbados and Guyana, within American oak casks for 5 years. The rum is sent to Jerez de la Frontera where it is transferred to casks previously used to age 20 year sherry "Dos Cortados" and finished for an additional three years, as mentioned in its name "5+3". Sweet, caramel & sherry on the nose with notes of vanilla, cinnamon, nutmeg & roasted fruit. Fruit filled & sweet sherry on the palate, smooth and a tad spicy with notes of caramel, chocolate, tobacco, leather & honey.
