25.01.2022 On these cold (by Queensland standards) mornings it's always good to have a nice breakfast to start the day. Just two of our favourite dishes including our Eggs Benedict with asparagus spears. Yummy!

Just check out the display from our friends at Your Local Markets, who have two markets every weekend on the Coast. With produce like this great meals must follow!!

05.01.2022 Love desserts, love coconut. Some friends cooked the best dessert last night - Impossible Pie and so easy to make. Just check this out: Ingredients Serves: 8 2 cups (500ml) milk 1 cup (90g) desiccated coconut ... 4 eggs 1 teaspoon vanilla essence 1/2 cup plain flour 120g butter or margarine 3/4 cup caster or white sugar 1/4 teaspoon ground nutmeg Directions Preparation:10min Cook:45min Ready in:55min 1. Place milk, coconut, eggs, vanilla, flour, margarine and sugar in blender. Mix well. 2. Pour into a greased and floured 25cm pie plate. Sprinkle nutmeg on top. 3. 04.01.2022 While everything coconut is the current trend in Australia it is also the symbol of tropical Brazil. If you ever have a chance to visit Brazil’s north-eastern beaches you will see row after row of coconut trees embellishing the landscape. Coconut is native from Asia, but has adapted well to Brazil’s conditions and has been part of Brazilian landscape for many centuries. Tried over the weekend to make pancakes with coconut flour (my GF daughter was staying) a real struggle as the flour is so much more absorbent to than normal flour and we like thin pancakes. Here are three common herbs we use in our cooking let’s call them the ‘Hero Herbs’ These tasty tempters are awesome in cooking because of their pungent flavours but are also amazingly healthy to eat. Here's a list of three common herbs and their nutritional benefits: o Basil:- antioxidants, anti-inflammatory & anti-bacterial essential oils, ...Vitamins A & K & iron o Coriander:- antioxidants, folic-acid, riboflavin, niacin, vitamin-A, beta carotene, vitamin C and is one of the richest herbal sources of Vitamin K o Parsley:- an essential oil in parsley, Eugenol, has been in therapeutic use in dentistry as a local anesthetic and anti-septic agent for teeth and gum diseases. Eugenol has also been found to reduce blood sugar levels in diabetics. (and all easy to grow at home!)
