19.01.2022 Hi guys ,we decided to start posting every week a recipe using our home made products that if you are local and you want to buy some you can find them at Mountain Growers Markets in Peats Ridge NSW 2250 . Fettuccini , sausages and broccoli . Recipe for 2 people ( big portion ) :... 200 g homemade sausages 500 g fettuccini pasta 1 broccoli head 2 garlic cloves 1 Birdseye chilli 20 gr Parmesan 20 gr oil 50 gr butter Cooking salt . Method : - Cut the broccoli into medium size pieces and blanch them in boiling hot salty water for 2-3 minutes , once cooked , keep the water aside. - peel the garlic , chop the chilli and cook them in a non stick pan. - take off the pork meat from the casing , place the meat in the pan with garlic and chilli and cook it for 5 minutes , add the broccoli and 1 ladder of the cooking water . Keep cooking together until the water is reduced to 1/3 . - take the pasta from the freezer and cook it for 3 minutes in the same boiling salty water that you use to blanch the broccoli . - once the pasta is cooked drain it and put in a bowl. - add the mix of sausages , broccoli , chilli and garlic to the cooked pasta , add the butter , and 2 tablespoon of extra virgin olive oil . - mix all the ingredients together - serve with freshly grated Parmesan cheese .
