20.01.2022 Mango Fruit Cake S.C. 375g Mixed Fruit 125g nuts, ginger, cherries 2 tab. butter... 1/4 cup water 500g chopped mango Bring to the boil and boil slowly for 5 mins. Allow to cool. Beat 2 eggs and add to cooled mixture. Sift 1 & 1/2 cups SR flour with 1 &1/2 teas. bicarb soda and fold into mixture until well combined. Place in Slow Cooker on High for 2 & 1/2 hours with tea towel under the lid. I should have waited until it was cold before cutting it. Note: No sugar. See more

16.01.2022 Boo chilli sauce How to make it: Cut the cheeks from the mango. Using a large spoon, carefully scoop the flesh out in 1 piece. Thinly slice the mango crossways.... Prepare the noodles following packet directions. Refresh under cold water and drain well. Use kitchen scissors to cut noodles into thirds. Transfer to a large bowl and add the Qukes, herbs, snow peas, chilli and mango slices. For the dressing, combine all the coconut water and sweet chilli sauce together and season with salt. Pour three-quarters over the salad and toss gently to combine. Combine the wombok and cabbage and arrange over base of large serving platter or board. Top with mango salad. Scatter over the cashews. 11.01.2022 Can’t wait to see the new entrance and signage, Spring Valley Farm. Great job Mum and Dad, Aunty Anne and Uncle Raymondo!! Soon the ground will be sprinkled with the purple of the Jacaranda!!!! Not really sure how the sales will work this year due to Covid restrictions and ensuring we are compliant with the big supermarkets. But this looks like a nice spot to hang out and sell mangoes. From Kathy McEachran, We decided to replace our Spring Valley Sign this year and upgrade the entrance. The sign was cut from a ironbark tree, and a nice slab was ripped from it with the chain saw. Auntie Ann and uncle Raymondo burnt the letters in with a soldering iron. Ray helped build the structure materials from the old Yarwun School, which would be over 100 years old and still in such good condition.

Unfortunately due to dry weather conditions the crop has not performed as well as previous years. Therefore we are unable to supply any to our usual local market customers.... I know many of you will be disappointed but crops are very dependent on having good rainfall which unfortunately has not happened this year. Don and Kathy McEachran

06.01.2022 Mango Cream Pie Recipe....by Aunty Annie MANGO CREAM PIE ( this is a variation on my friend Carmels orange cream pie recipe) INGREDIENTS... 1 x 23cm Pastry Shell and about 300mls cream whipped with a little vanilla. Custard Filling- 1 cup milk. -1/4 cup water - 1 dessertspoon custard powder. -1/4 cup soft butter - 1 dessertspoon cornflour. -1/3 cup caster sugar -1/2 teaspoon vanilla extract or vanilla bean paste 0. In a cup or small jug ,blend the custard powder and cornflour in the water. Till smooth. 0. Warm the milk in a small saucepan , gradually stir in the blended flour and custard powder. 0. Stirring constantly over a medium heat , allow the custard to come to the boil and thicken. Stir well and remove from the heat. Set aside to cool. 0. In a separate small bowl , cream the butter and sugar. Add vanilla then fold in to the cooled custard. Mango Filling - 1 1/2 cups of cooked mango ( I do my mango in a glass baking dish in the oven with just a little water and a teaspoon of vanilla bean paste at 160 c for about 45 mins stirring very 15 mins) - 1/2 cup water + 1/2 cup extra water -1 tablespoon corn flour -1 tablespoon custard powder -1 tablespoon soft butter -1/4 teaspoon vanilla (paste or extract) 0. Blend cornflour and custard powder in the extra 1/2 cup of water till smooth. 0. Place mango and water in a saucepan , start to heat then stir in blended cornflour and custard powder. Stir over medium heat until the mixture boils and thickens. Stir well , remove from heat , fold in butter and vanilla. 0. Allow to cool slightly then pour over custard layer. Refrigerate till cool. 0. Top generously with whipped cream ,serve and devour.

It's the ice cream that we can all enjoy without any guilt. Approved by both WW and superchef Gary Mehigan. Enjoy it, dairy-free, sugar-free but added flavour.... Difficulty easy Cooking time less than 15 minutes Serves 4 Ingredients: 2 ripe mangoes, diced 2 bananas, diced 2 teaspoon finely grated lime rind cup (60ml) fresh lime juice 12 fresh lychees, peeled and stone removed lychees and toasted coconut flakes to serve (optional) Method: Place diced mango and banana in a zip lock bag and freeze. To make the sorbet, blend frozen fruit in a food processor or thermomix with rind and juice until smooth and creamy. Spoon into a container and freeze. 03.01.2022 Cool down over the summer with the incredibly delicious ice-cream in this Mango Macadamia Crunch

03.01.2022 Mango cheesecake with macadamias and lime syrup You can make this the day before and it only takes 30 minutes. Youre welcome! - by Better Homes and Gardens Ingredients... Cooking oil spray, for greasing 125g Granita biscuits 60g butter, melted 14 cup roasted unsalted macadamias, roughly chopped 2 Tbsp water 3 tsp powdered gelatine 1 mango, flesh roughly chopped 2 x 250g blocks cream cheese, chopped, softened 2/3 cup caster sugar 2 tsp vanilla bean paste 300mL thickened cream, whipped to soft peaks Extra 2 mangoes, flesh thinly sliced Extra 1/4 cup roasted, unsalted macadamias Mint leaves, to garnish Lime syrup: 12 cup water 12 cup caster sugar Finely grated zest and juice of 1 lime Method 1. Grease a 22cm round springform tin with cooking oil. Line base with baking paper. Put biscuits in the bowl of a food processor and process until fine crumbs form. Add butter and macadamias, processing until just combined. Press biscuit mixture into base of tin and smooth down surface with bottom of a glass. Refrigerate. 2. Put water in a heatproof jug and sprinkle over gelatine. Using a fork, whisk until combined. Set aside for 5 minutes. Microwave for 30 seconds or until gelatine has dissolved. Set aside to cool for 5 minutes. 3. Meanwhile, put mango in a food processor and process until smooth. 4. Put cream cheese, sugar and vanilla in the bowl of an electric mixer and beat on low until just combined. Increase speed to high and beat for further 5 minutes or until light and fluffy. Gradually whisk in gelatine mixture until combined, then whisk in mango puree and whipped cream. Pour mixture into prepared tin and smooth down surface. Refrigerate overnight to set. 5. To make lime syrup, put all ingredients in a small saucepan over a high heat and bring to the boil. Simmer for 5 minutes or until reduced by half. Set aside for 30 minutes or until mixture cools to room temperature. 6. Remove cheesecake from tin. Decorate top of cheesecake with extra mango slices and extra roasted macadamias. Garnish with mint sprigs. Drizzle with a little of the lime syrup, then serve mango cheesecake with remaining syrup on the side.

01.01.2022 Prawns Avocado and Mango Salad! Nothing says Spring and Summer more than this salad! Ingredients (serves 4) 4 handfuls mixed lettuce leaves... 2 mangoes, cut into cubes 1/2 red onion, thinly sliced 20 cooked prawns, peeled and deveined 2 avocados, cut into cubes 1 handful coriander leaves, chopped 1 long red chilli, chopped (optional) DRESSING: 2 Tbsp white condiment (white balsamic vinegar) 6 Tbsp olive oil 1 Tbsp honey 1/2 Tbsp wholegrain mustard Method In a large bowl or on a platter, arrange lettuce, mango, onion, prawns and avocado. To make the dressing, shake ingredients in a jar until combined. Taste and adjust to your liking. Pour over salad, and sprinkle with coriander leaves and chilli.
