22.01.2022 Hey its Kyles here! I have a busy weekend and needed to use the basil from my garden so this weeks recipe is my Quick and easy Basil and Almond Pesto! No doubt it would be frowned upon by pesto purists....its lighter than a traditional pesto with less oil and cheese and almonds instead of pinenuts. ... I've used apple cider vinegar but you can also use lemon juice! I didn't have any lemons on hand so vinegar does the trick in this version. A tablespoon of this pesto goes a long way and has many uses in your meals and snacks! Add to greek yoghurt for a creamy dip or salad dressing. Stir into scrambled eggs or frittata. Stir through cooked pasta with a dash of the cooking water. Stir through carrot or zucchini noodles with a dash of the cooking water. Add to grilled chicken. Stir through ricotta cheese for a dip or to throw through your pasta or vegie noodles. Spread on crackers or toast and top with fresh tomato. Use as sauce base on home made pizza. Freeze in ice cube trays and use tossed in spaghetti sauce, lasagne, spinach and ricotta filling or stews. Recipe Bunch of fesh basil, leaves picked off stems. 8 small spring onions trimmed. 1 clove of garlic 2 tblsp apple cider vinegar 3 tblsp extra virginolive oil 1 tsp mustard 2 tblsp water 50 gms of raw almonds 20 gms of parmeson cheese Salt and pepper to taste. Method Add all ingredients to a food processer and pulse until the mixture comes together. You can pulse more if you like it smoother and add more water if you want a thinner texture. Taste and add salt and pepper to your liking. Store in a jar in the fridge or freeze in portions for later use!
