25.01.2022 Nope, that's not my cake. It's a student's . Yes, it doesn't have to be a dream. It's a very attainable reality. Although we don't have any physical workshop planned for the near future, you can still learn the DTC ways in your own time and at your own pace via our online school. I won't be holding your hand physically like I do in the physical workshops BUT I will be doing it virtually . Yes, there will be as much or as little hand ...holding as you need. The course materials (written and video) are very extensive and easy to follow but if you have any questions at all, you can ask me within the course, on DMs, emails etc. I am always here to answer. 24.01.2022 DTC chocolate cake - THE MOST raved about chocolate cake !! No jokes, I get students messaging me daily about how easy this recipe is and how gooood it tastes. As per all DTC cake recipes, there are very few ingredients: eggs, sugar, thickened cream (35% milk fat or more), Dutch processed cocoa & self raising flour (or plain flour + bp). Ahuh, that’s is all. As per my previous post, I’m all about saving my valuable time. Efficiency is ...King in the DTC kitchen. 18.01.2022 We love sharp edges, can't you tell! From the cakes layers to the actual cakes, to how we sit or stand when we work, everything has to be straight! Why, because everything play into each other. Level and straight layers help to build a level and straight cake. Same with the person who is making the cake. If their posture is bent, then their perception of straight is skewed. This makes icing a straight cake a bit harder than it needs to be (more on this in my previous post on the grid). Plus, the satisfaction of looking at a smooth, straight and sharp cake . I get like an actual rush of adrenaline. Sometimes, I do a little jump. Other times, I squeal and have to refrain myself from squishing the cake (like you wanna squish a baby's cheeks coz they're so cute). Anyone else? LOL

13.01.2022 Sooo, one of my favourite activities while my daughter is asleep is to look at photos and videos of her . Anyone else do this? Lmao I was doing just that after she went down for the night tonight and found this! I made this cake for my pregnancy announcement when I was 20 weeks (i think) and now my baby is almost 7 months. What happened?! On another note, I could see this cake in alllll the colours . Monochrome is where it’s at yo! What colour would make? And what would u change the baby feet to?

12.01.2022 I often get students at my workshops tell me they bake when their kids are asleep. Like wth, when do YOU sleep? . I know the majority of our students and (many of you) juggle about a million things at once: kids, full time job, family, and then CAKES! I’m often in complete awe of these women’s dedication, tenacity and just sheer power. Like, I only have ONE kid and dang it’s hard . Whenever things get a bit much and I find myself overwhelmed , I think t...oughen up Thao everyone does this plus more. This usually helps give me a kick up the bum and put some fuel in my tank to keep going. So in this regards, one may say that’s it’s helpful. But it’s oh so dangerous, how crazy life is these days. And then you speak to people and find out that their life is just as crazy if not more. And somehow, this makes everything seem normal. Like it’s completely normal to be a good mum, a successful modern woman, a healthy and fit human being who eats organic and buys only natural products, who cares about the planet and recycle and remember to take shopping bags everywhere etc - ALL AT THE SAME TIME! Can we all just take a moment to stop and tell ourselves that this is NOT NORMAL! That all these expectations are too much! And that we should all be proud for doing the best we can instead of thinking we’re not doing enough! Anyway, this rant came about because I was looking at these cake pictures and thought when am I going to be able to make a two tiered cake like this again? 10.01.2022 Are you a bit of an eye-baller? As in, you kinda guess your way through the whole caking process? You never know how much of things i.e cake batter, buttercream etc to make, so you just take a stab and hope for the best? Well, me too when I first started out. I love cooking but I'm like one of those Asian mums kinda cook i.e a bit of this, a pinch of that, do this until it 'feels' ready etc . I've always gotten away doing this with food, until I got ...to making cakes and desserts. Oh the stress! Especially when you need to ice 12 cupcakes but only made enough buttercream for 11! 09.01.2022 You can make a good looking cake without all the fancy, expensive tools. BUT, you can't make a great tasting cake without quality ingredients. Period. Quality often = I know, but. Rule #1: Don't cheap out on ingredients. ... The difference between normal cocoa and premium cocoa may be $15 per kilo but the difference for the 65g of cocoa you need in a DTC chocolate cake is less than $1. That $1 is the difference between someone remembering your product or not. Rule#2: Cheap out on your time. This is pretty much my life motto. Everyone has the same 24 hours in a day, so how can we make the most of them? By being VERY frugal with our time. When I first started out, EVERY opportunity was an OPPORTUNITY for me. A free collab photoshoot for exposure? Sure! A three tier fondant wedding cake that I've never done before which I will absolutely loath myself for staying up all night making? Sure! I used to spend my time like I was a millionaire . Needless to say, it made me time poor AND proper financially poor for as long as I can remember. Not to mention energy poor, mental/emotional health poor etc. Just all rounder poor. And I almost shut the door to DTC. Things started turning around when I did the following: - Saying NO a lot more - Reduce my offerings: no cupcakes, cookies, tarts etc. JUST custom cakes. - Invest in time saving equipments: bigger mixer instead of buying multiple small ones, AGBAY instead of hand cutting cakes with a knife etc. - Put in the work to create efficient systems and processes. As soon as I started valuing my time, it also started to go up in value. Meaning, my hourly worth started to increase. My productivity increased. My physical/mental/emotional health improved. 09.01.2022 That buttercream render . This DTC trio was inspired by the clients art deco house. It was for a combined 50th and housewarming. I always loved coming up with something completely unique and meaningful for our clients. The white cake resembled the shape of the house which had rounded corners on the exterior and the chocolate cakes represented the timber used throughout the interior.

07.01.2022 Textured AND rough edges, who even am I!??! Despite what I usually stand for aka razor sharp edges and super smooth side, this style is actually one of my favs. I dunno, something about the roughness being presented neatly, kinda like controlled chaos. Keyword, control. I’m a control freak . This took ages longer to do than the smooth sharp cakes coz I was trying to ‘control’ the texture . As Elsa would say, #letitgo

01.01.2022 When you don’t see me on the grid daily, you know Stevie hasn’t been sleeping well . This bubba here is almost 8 months!! She’s so cheeky these days, extremely curious and so so sassy . My baby girl went from sleeping through the night (for like not even two weeks ) to waking up twice a night, then three times, then every two hours, every 90 minutes and for the last few nights every hour . ... I know this too shall pass, as it always had in the past but damn the sleep deprivation is REAL!
