Pratibha Karan, who authored the book Biryani, speculates that biryani was an army dish in mediaeval India. She believes it was modified from the Persian pilaf brought to India by Arab traders. The armies, unable to cook elaborate meals, would prepare a one-pot dish ...where they cooked rice with whichever meat was available.
