19.01.2022 Porkd Porchetta INGREDIENTS 3kg pork loin, belly piece attached, skin on 4 cups (1L) Willie Smiths Apple Cider... 4 tablespoons of fennel seeds, roasted and ground 2 tablespoons of coriander seeds, roasted and ground 1 tablespoon of cumin seeds, roasted and ground 2 tablespoons of sea salt 1 tablespoon of cracked black pepper olive oil butchers twine METHOD Trim excess fat from rib section of pork belly then score skin. Rub whole pork loin thoroughly with spices. Pour cider into deep-sided tray. Place pork flesh side down in tray and leave for 2 days to marinate in fridge. Remove pork loin from marinade and dry off with paper towel. Place large cake rack on tray. Lay pork on rack (skin up) and return to fridge to dry out for 1 day. Heat BeefEater Signature BBQ to low to medium heat. Remove pork from fridge and place on workbench to bring to room temperature. Roll pork starting at loin side into tight roll. Secure roll with butchers twine then position on rotisserie skewer. Place pork belly in BeefEater Signature BBQ and cook for at least 4 hours. Using BeefEater BUGG Digital Thermometer check internal temperature of pork. Recommended to cook porchetta medium (72C) or until desired. Rest porchetta in warm place with foil for 30 minutes before slicing. Serving suggestion of slaw and green beans topped with crisply crackling

Ingredients: 2 onions,diced 5 garlic clove,minced 250g black beans 50g chipotle chilli sauce 1 litre pasta sauce 1 tbs smokey paprika 500g minced beef 1 iceberg lettuce, shredded 4 tomatoes,sliced 100g grated cheese 450g flour 1tsp salt 1tsp baking powder 50g olive oil 250ml warm water Method 1. Set up the grill with the optional trivet and hotplate accessories. 2. Combine flour, salt, baking powder in a bowl. 3. Make a well in the centre and pour oil and water into it mix with your hands for 10 minutes or until smooth. 4. Place on a floured bench and divide in half and then half again until you have roughly 16 portions. 5.roll into balls and flatten with your hand, cover with a tea towel and allow to rest for 15 minutes. 6. Meanwhile, pre-heat the hot plate up to medium high temperature and roll out the balls until thin, don't stack them or they will become stuck. 7. Place tortilla on the hot plate and flip when the side that’s down starts to brown slightly, once cooked set aside. 8. Turn on the burner under the trivet to medium and in a wok fry off the mince with the paprika, once golden brown and a little crispy set aside. 9. Sweat down the onion and garlic, once cooked add the black beans and the sauces, add mince and cook out for a further 15 minutes. Set aside. 10. Take one cooked tortilla and place some lettuce in the middle spoon over some mince mixture and top with a slice of tomato and cheese. Fold up and toast on the side grill, serve.

11.01.2022 BACON POTATOES INGREDIENTS 8 medium sized potatoes suitable for salads or boiling (firm fleshed) 8 slices of smoked streaky bacon (use prosciutto as replacement)... 16 sprigs of thyme or rosemary Toothpicks METHOD Cut the potatoes lengthwise in halves, cut the bacon into 16 long strips. Place a sprig of herb onto the cut side of each potato and wrap a slice of bacon around before fixing it with a toothpick. Place onto the flat plate of your medium hot BBQ and close the hood (or cook on indirect heat). Otherwise place them into a baking tray that you tightly wrap with tinfoil and cook it over direct heat (in case your BBQ is overloaded just bake them uncovered in your oven at 190 degrees) Cook for 30 - 40 minutes until the potatoes are golden brown and soft through their centre. Serve with sour cream or greek yoghurt and fresh green salad

07.01.2022 Vanilla-Bourbon Blueberry Pie Ingredients Print 2 pie crusts 2 lbs. fresh blueberries... cup brown sugar 3 tbsp cornstarch cup bourbon 1 tbsp vanilla extract 1 vanilla bean seeds removed from the pod Zest from 1 lemon 1 egg beaten Demerara sugar for sprinkling Instructions Set the EGG for indirect cooking with the convEGGtor at 350F. Prepare one crust in a 9-inch pie plate In a large bowl mix together blueberries, brown sugar, cornstarch, bourbon, vanilla extract, vanilla bean seeds and zest of 1 lemon. Toss well to coat making sure everything is well mixed. Spoon the filling (and all juices) into the prepared pie plate. Decorate top of pie with braided crust or top crust from the second pie crust. Brush the top crust with egg and sprinkle with demerara sugar. Place pie in the EGG and bake for 50 minutes or until crust is golden. Let rest for at least 3 hours. Serve with vanilla ice cream and enjoy!

03.01.2022 Naan Bread This soft and chewy bread can be made at home with simple ingredients. It is so easy you will want to make it all the time! Ingredients 1 teaspoon sugar... 1/2 cup warm water 1/4 ounce active dry yeast (2 1/4 teaspoons) 2 1/4 cups all purpose flour 1/2 cup plain yogurt 1/2 teaspoon salt 1 Tablespoon oil Oil for greasing the skillet 3 Tablespoons salted butter, melted Instructions In a small bowl, add the sugar, warm water, and yeast together. Stir to combine well. The yeast should be activated when it becomes foamy, about 10 minutes. Add salt to flour and combine. Transfer the flour to a flat surface and make a well in the middle. Add the yeast mixture, yogurt, and oil, knead the dough until the surface becomes smooth and shiny, about 10 minutes. Cover the dough with a damp cloth and let it rise in a warm place (for example: beside the stovetop or warm oven). The dough should double in size, about 1 hour. Divide the dough into 8 equal portions. Roll the dough to a 8 circle using a rolling spin. Heat up a skillet (cast-iron preferred) over high heat and lightly grease the surface with some oil to avoid the dough from sticking to the skillet. Place the dough on the skillet. When it puffs up and bubbles and burnt spots appear, flip it over and cook the other side. Repeat the same until all dough are done. Brush the naan with the melted butter, flake salt and cilantro. Serve warm.
