The first dumplings recorded in Chinese history were made during the Han Dynasty by Chinese medical practitioner Zhang Zhongjing, who had returned to his ancestral village to find his fellow villagers suffering from extreme famine and frostbite around their ears. Zhang wrapped lamb, black pepper and medicinal herbs into scraps of dough skin shaped like ears and boiled them, serving Chinas first ever dumplings in a warm broth that would cure the entire village of sickness. The dumplings were said to have thawed the villagers cold ears and promoted blood flow - who knew these delicious pockets of goodness were as beneficial to our tummies as they are to the rest of our bodies!
